Eclair ⚡️

With this horrible rainy and cold Saturday there was nothing else to do than cook some sweets and drink hot tea. After browsing a few recipes of things I wanted to cook, the unanimous choice was chocolate eclairs! And here I am in my kitchen, preparing pate a chou and custard. Of course chocolate eclair is not just enough so I also prepared two other variations: macha and chai. Each was just perfectly delicious. So here is my recipe. Eclairs consist in three preparations: the pate a chou, the custard and the coating.

For the pate a chou:

10cl of water; 10cl of milk; 3 eggs; 70g of butter; 110g of flour; a bit of salt and a tea spoon of sugar. 

In a pan heat the milk and the water. Add the butter, the sugar and the salt. When the butter has melted add the flour all at once and stir well. Continue cooking and stirring until the dough is smooth and doesn’t stick. Cool down a bit and add one egg. Stir until the dough is smooth again. Add the second egg and do the same and then the third egg and repeat again.

Pre-heat your oven at 180 deg. Use a pipping bag to shape the eclairs. Remember they will double almost size so tiny is better. Cook for 25 to 30 minutes.  

For the custard: 

30g of flour; 50g of sugar; 2 egg yolks; 25cl of milk.

In a pan heat the milk. In a bowl mix the eggs with the sugat, add the flour all at once and mix well. Add half ofthe  milk and stir well. Add the mix to ghe rest of the milk in the pan and cook at low heat while stirring for 5min, or until it thickens. Add the flavoring of your choice: cacao powder (2 tbs); macha powder (1tsp); chai spices: cardamom, cinnamon, vanilla, nutmeg… up to your liking. I personally like it with a lot of cardamom.

Cut the eclairs from the previous step in halves and fill with the custard. 

For the coating: 

I didn’t use the usual butter cream but rather a simple sugar coating made with ice sugar, water and macha or cacao powder for the coloring.  Add water little by little to obtain a rather thick mix, and apply with a spoon.

Keep refrigerated. 

Petits sablés- プチサブレ

Nothing simpler and tastier than little homemade sablés to go with fresh strawberries and help you combat a cold and gloomy Saturday! I made three variations: plain, black sesame and macha. It takes only a few minutes to make them a few more to bake them and they make everyone happy!!! 

Petits sablés: 

– 180g of flour

– 50g of brown caster sugar

– 40-60g of butter depending on the size of the egg

– 1 egg

– 1tsp of matcha powder

– 1tbs of black sesame seeds

In a bowl mix the flour, the sugar, the egg. Add little by little the butter until obtaining a dough that is dense but doesn’t stick. If it sticks too much add a little more flour. Pre-heat the oven to 170deg. Split the dough in 3. In one of the 1/3 add the matcha powder and stir well, in a second 1/3 add the sesame and stir well, in the last 1/3 do nothing. Roll each of the dough until 3-4mm high on cooking paper and cut with the size and shape you like. Bake until it just dtarts to golden (usually about 10min depending on your oven).

 

 

Matcha meringues- 抹茶メレンゲ

Because the recipe for the panettone (which was a total failure) was using only egg yolks I decided to make meringues with the whites. In the country house I opted for non electrical appliances in the kitchen, except for the blender, I knead manually and I beat my egg whites manually too. So I added a pinch of salt to 3 egg whites a beat them until firm. Then I added 70g of icing sugar, and 2 large tea spoons of matcha powder. It gives this shiny green mix. Then I preheat the oven to 110deg and on s cooking paper sheet I made small mounts of the mix. The shape and size won’t change much, so you can decide easily for the size and shape you want. And I cooked until dry and a little hard, because I like my meringues soft inside, if you like them hard and dry keep them longer. It took about 15min for 4cm meringues. If you notice the edge getting brown is that the oven is too hot, lower the temperature to 100deg.
