Cauliflower

How do you like your cauliflower? For me it’s raw, steamed, boiled, grilled, in gratin, in soup, in purée, with olive oil, with butter, with lemon juice, with just a pinch of salt… yes, you’ve got it. We love cauliflower at home, as well as his friends broccoli and romanesco and it is just the pick season for these versatile and easy to cook vegetables in Chiba. So I’ve got some beautiful ones at the farmers market, youpi!!! The question was what will I do with them, how could I cook them? Because I came back from work very late and it was very cold I wanted a very quick solution so I decided to cook (steam and grill) them with spices.

 Spicy romanesco and cauliflower:

I wash and cut the romanesco and the cauliflower and put them in a pan and I grilled them at high heat then I add 1mm of water. Add a tsp of curcuma powder, 1tsp of curry powder, 1tsp of cardamom powder, salt and black pepper. Serve and eat while hot! 

One-plate lunch from the country

I love to prepare one-plate for lunch, in particular when we have friends visiting. It is easy to prepare and to serveat anytime because the vegetables can be cooked very quickly and the rice, the meat etc… can be kept warm or re-heated very easily. So when the time comes to eat I just need a few minutes to prepare the plates. So simple with some seasonal vegetables grilled and deglazed in soya sauce, a piece of pork filet for the meat eaters, rice, and of course some umeboshi, some pickled Chinese cabbage…

Treasures from Nagano & soba recipe

One of the thing I love in traveling is to find new products or locally produced natural products that are not easy to find otherwise. Shinshu – 信州, the region of Nagano, is quite well known for the production of apricots, apple and buckwheat. So after our weekend in Hakuba I could not come back without some of these local products, bought on the way between Nagano and Hakuba (that’s when it comes handy to rent a car!). Of course the season for apples and apricots is way past but I found some dried fruits, which are perfect for breakfast or snacks and will perfectly accompany my Sicilian almonds. I also found some natural honey and some wheat meal. 

Soba (buckwheat noodles) are something I really love but finding good soba is not always easy, so I barely cook some. And I haven’t tried to make some yet. But in Nagano, it is quite easy to find hand made noodles. And since spring is in the air these days I cooked them in a very simple fresh and green manner.

Soba with tofu and spinach: 

– 180g of dried buckwheat noodles

– 1 small bundle of fresh spinach

– 1 pack of baby spinach salad

– 1 block of thick fried tofu – 厚揚げ 

– some broccoli sprouts or some pumpkin or sunflower seeds

– 1/4 of lemon juice

– 1tbs of soya sauce

In a large pan boil water. Wash the bundle of spinach and cut them in 2cm pieces. Add to the boiling water, add the noodles. Cook them until al  dente or as you like them. Drain them.

While the noodles are boiling, cut the tofu and wash the baby spinach. Set the baby spinach in the plates. Heat the tofu in a fry pan for a few minutes at medium heat. Serve the noodles mixed with the spinach, add the lemon juice, the soya sauce, the tofu. Finish with the broccoli sprouts or the seeds.

Some more green & pasta!

When I look at my food pictures these days it’s a lot of green that I see! Most of my recent preparations included leek, canola, spinach, celery, ice plant, sprouts, lettuce…  Even though it’s winter we don’t get bored eating only cabbage and potatoes! Luckily Chiba has a mild weather and many different veggies grow all year round. I remember cooking a lot of pink/purple food last year at this time of the year because I could find red cabbages, but this winter I haven’t found any yet. Anyway, green is delicious, and I prepared a kind of dry veggies and pasta soup with 1 leek, 3 branches of celery, and some little spinach. As usual, I start by cooking the leek and celery in a bit of olive oil, then cover with water and pasta for soup, once all the water has disappeared I add the spinach for one or two minutes and serve. I added some freshly gratted parmegiano. An other way to cook and eat pasta!

Barley risotto style

I love barley but I don’t cook some too often. An other curiosity of what happens in a kitchen! May be it’s because I have the impression it is only good for soup or that it takes too much time too cook. But actually it is not and in risotto style with veggies, or in salad it it really delicious and changes from classic recipes. And in the middle of winter, with winter veggies it is a delicious meal. 

Barley risotto style with fresh veggies: 100g of barley, 1 leek, 1/3 cauliflower, 1 hand full of little spinach, olive oil, salt and pepper. In a pan heat the olive oil; cut the leek and add it to the oil, strir at low heat until soft. Add the barley and cover to twice the height with water. Cook under cover 15min at medium heat or until almost all the water is gone. Add salt pepper, the cauliflower washed and cut, the spinach washed and cut. Cook 3min and serve immediately.

Grilled miso onigiri – 味噌焼きおにぎり

The other day while browsing my IG feed, I saw the beautiful picture of grilled onigiri (rice balls) from my IG friend Junko @junkikat. And instantly I wanted to eat some. I love grilled miso onigiri, but for some obscure reason I never make some… Junko nicely gave me her recipe and I slightly adapted it to what I had in my fridge and my pantry. So here is what I did: first cook some Japanese rice. While it was cooking I prepare a mix of miso, I had only rustic granulous miso, so I used that one, 2 tsp. Then instead of the mirin I used a little bit of rice oil and vinegar, just a few drops. Vinegar can be replaced by a few drops of sake. And then added 1/2 tsp of sugar. Stir well to obtain a homogeneous mixture. Make the rice balls by taking 1/2 of rice in wet hand and shape them as you like with one flat surface for the miso. Spread the miso on the flat surface and then grill them in the oven or in a fry pan. I used the pan because I have a huge oven and I found that silly to turn it on just for that. So I flipped the onigiri miso side on the heated pan (grease it a bit if it is not anti-adhesive) and wait a few minutes until the miso starts to golden. Serve with what you like. For this time it was scrambled eggs and a simple salad with tomato, carrot and ice plant.

Souvenirs from Sicily

After one week in the south of Sicily trying local products and visiting historical sites, it was obvious I would not come back to Japan with empty hands.  And with both Christmas and my birthday I was spoiled. Here is a bit of the Sicilian delights and gears I took back with me. Starting from the top right corner and going clockwise. First a new ravioli rack and the wooden roller, for large ravioli this time. I already tried it for the foie gras ravioli and for the ricotta ravioli, amazing! Very easy to use, larger ravioli seems much easier to make than smaller ones! Then a cooking book of Sicilian cuisine: “la cucine Siciliana”. My rusty Italian has gotten much better this year, so reading in Italian would not be a problem. Then some speck, some fresh ricotta salata. A little gnocchi rack to shape my gnocchi instead of using a fork! Sicilian flours for bread and pasta, polenta. A ceramic fruit plate from Caltagirone, I am totally in love with these ceramics, but I had a hard time finding some vintage ones. And in the background a new apron! So, very soon on Tokyo-Paris sisters some recipes using all these! And you, what do you bring back when you travel?

Lemon and ricotta tart

A. cooks once a year and it is for making my birthday cake. I like to have it with tea, because then it all about the cake rather than having it for dessert. Every year I choose the cake I would like to eat and he makes it the way I like it. He usually searches for recipes on the internet, and from this base adjusts it to the gears and ingredients we have, and to my taste. Since he has little experience he usually gets a bit of help or some advises from who is available around. This year, since we were in Sicily, country of citrus fruits, I chose a lemon tart with meringue. But I like my cakes not too sweet, not too buttery, not too creamy, so my mum and I helped him a bit. The result was amazing. So here is what he did for a 25cm tart: first pre-heat to 180deg ghe oven.

for the dough:  a classic sablé dough with 200g of flour, 1 egg, 75g of butter. Mix all the ingredients and roll the dough to the size of your pie dish. Bake for 10min, the dough must not change color too much.

for the lemon filling: instead of preparing lemon curd we opted for something easier. The zest and the juice of 2 lemons is mixed with 2 egg yolk and 1 egg, 120g of brown sugar, and 4tbs of fresh ricotta. Mix all the ingredients to obtain a smooth creamy texture. Set in the dough. And cook in the oven at 180deg for 30min.

for the meringue: 2 egg white, 70g of icing sugar, a pinch of salt.  Beat the egg whites and the salt until firm, continue beating and add the icing sugar slowly until all is smooth, shiny white and firm. Put the mix in an icing bag and decorate the tart as you like. Bake at 180deg for 10min. Check to be sire the meringue doesn’t burn.

 We finished the decoration with some very thin slices of Sicilian sweet lemon grilles on the oven for a few minutes.

Tagliatelle

Being in Italy we eat fresh pasta quite often. And being with our mother we cook all together. This time it’s a recipe that our mother created. Very simple, taking advantage of the seasonal products and that can easily be prepared ahead and for large tables. This is tagliatelle with radicchio, spinach, speck and pine nuts. Served with fresh parmegiano. You need one radicchio, a few bundles of spinach, a few slices of speck, a handful of pine nuts, olive oil, fresh parmegiano. In a large pan, heat some olive oil, wash and cut in bite size the vegetables, cut in bite size the speck. Add all in the pan and stir until soft but still colorful. In a small pan, grill the pine nuts, when golden roughly crush them, add to the vegetables. Boil the tagliatelle (homemade, fresh or dry), when al dente, drain them and add them to the vegetables mix, add olive oil, stir well and serve. Top with parmegiano.
