Shiitake and spinach quiche

This is the end of winter, but it is still chilly and though the spring greens are quite attractive, sometimes a good all winter quiche with spinach and shiitake is a perfect dinner. And because I find that a short movie is easier to understand the technique than long sentences I am trying again to make videos of the cooking process. Tell me how you like it. I’m craving to know your opinion to improve from your feedbacks! 

Spinach and shiitake quiche: 

For the quiche crust

– 160g of flour

– 20g of wheat bran

– a pinch of salt

– 1 egg

– 40g of butter

– a bit of water eventually  

In a bowl mix all the ingredients and knead until the dough is soft. Add water or a bit of flour to adjust the hydration level. In a floured top roll the dough to the size of your pie dish. 

For the filling

– 3 eggs

– 20cl of milk

– spinach to your liking 

– shiitake to your liking

– salt, pepper

Wash and blanche the spinach. In a bowl beat the egg, the milk and yhe salt and pepper. Set in the dough. Wash and slice the shiitake. Add the spinach and shiitake.

Bake at 170deg for 30min (the cooking time depends on the depth of the filling) or until golden.

Cauliflower

How do you like your cauliflower? For me it’s raw, steamed, boiled, grilled, in gratin, in soup, in purée, with olive oil, with butter, with lemon juice, with just a pinch of salt… yes, you’ve got it. We love cauliflower at home, as well as his friends broccoli and romanesco and it is just the pick season for these versatile and easy to cook vegetables in Chiba. So I’ve got some beautiful ones at the farmers market, youpi!!! The question was what will I do with them, how could I cook them? Because I came back from work very late and it was very cold I wanted a very quick solution so I decided to cook (steam and grill) them with spices.

 Spicy romanesco and cauliflower:

I wash and cut the romanesco and the cauliflower and put them in a pan and I grilled them at high heat then I add 1mm of water. Add a tsp of curcuma powder, 1tsp of curry powder, 1tsp of cardamom powder, salt and black pepper. Serve and eat while hot! 

Japanese style pasta

In Japan there are plenty of Italian restaurants but many serve not a genuine Italian company cuisine, but rather pasta, or more spaghetti, with a strong Japanese touch. The much classic would be mentaiko – 明太子, some kind of poutargue, or spucy fish eggs, with nori. But it goes much beyond that. At first it is a bit strange to eat spaghetti with Japanese flavours, but there are some really nice combinations. In particular, I find that the nori goes very well with pasta. So I prepared some Japanese style pasta for lunch. I didn’t have spaghetti, so I used penne. And because I had some pickled Chinese cabbage to finish, I prepared some tomato sauce and serve the whole thing together. Deliciously confusing!

Penne Japanese style: 

– 200 of penne

– 3 tomatoes very ripe

– 1/8 of pickled Chinese cabbage, if not pickled, you will need a little of white vinegar of your choice in addition, and a pinch of salt 

– 1tbs of rice oil, or vegetal snd neutral oil

– 1 handfull of thinly cut nori

– black pepper  

Boil water for the pasta, in the meantime in a saucer set the tomatoes diced. Cook at medium heat until it reduces. Cut the cabbage in bite size and add to the tomatoes. If you are using non-pickled Chinese cabbage do the same but add 1tsp oc vinegar and a pinch of salt. Add the ground black pepper to your liking. Once the penne are cooked, deain and serve in the plates. Add the tomatoes-cabbage sauce and complete with a topping of nori. Serve immediately.

 

Warm soup for cold day

Since I was in France in November when it snowed in Tokyo, today was the first snow of the winter for me. It only snowed to be cold, wet but not white, but I don’t mind because we ste going to the mountains soon and we will have plenty if snow and white there! But damn, how this rainy-snowy weather plus A. Away make me feel cold and gloomy!!! I needed a warm colorful soup to cheer me up before my late night meeting. So after browsing the fridge I decided to prepare a warm soup with some fresh sunny taste. I used coconut oil, fresh ginger and a zest of lemon for the sunny and warm side, together with a red carrot and two leeks for the winter side. And because I’m busy running here and there, I added some green lentil. That’s it! So simple to cook. In a large heated pan I put 1/2tsp of coconut oil,agg the leek cut in small sticks, then add the carrots cut in small sticks too. Then 2 large zest of lemon, and a piece of ginger peele and cut in small pieces. When the water comes to a boil I add 2 small handfuls of green lentils, a pinch of salt. Cook for 10min (the lentils must not be over cooked and too soft, it’s better if they are slightly undercooked). Serve and eat rigt away!!!

Plum trees start to bloom

It’s been a few weeks that the red plum trees in the garden were boiling to bloom, now it’s official plum flower season has started. Even some if the white plum trees have started to bloom too. It is one of my favorite moment in the year. It is still cold but spring is already showing up. I like the beautiful little flowers against the crisp blue sky.  So using the plum as a base I prepared a one-plate lunch with pink small radishes for the color, plain white rice shaped in plum flower (I made 5 little balls that I then compacted together using a piece of cooking wrap), an umeboshi on top. Then scrambled eggs with nori and grilled shiitake with sesame and a drop of sesame oil and soya sauce. And everything ready in 20min (when in a rush cooking rice in a pan is much faster than the rice cooker). And shaping the rice took me the most time because I had no clue how to do it, but I’m quite proud I managed! Happy Setsubun!!!

Vegan pasta

What better than a pasta plate for dinner when in a rush? And to accomodate it: spinach and tofu simply cooked in olive oil. So simply delicious now with the pick of the spinach season, they are so soft and sweet. 

Boil the pasta of your choice and drain them. 

In the meantime, start draining a puece of tofu (hard or soft, both are good), wash the spinach and cut them in 4-5cm long pieces. In a large heated pan, add olive oil and the spinach, then the tofu in crumbles. Stir well. Add the boiled pasta, stir and add a bit more olive oil, salt and pepper. Serve and eat immediately.

Kabocha-mushroom risotto

This is the perfect winter dish for a busy evening! Super simple to prepare in a short time and you can prepare it before and reheat it just before eating.
For two people I use 1/6 of kabocha, 5 mushrooms, risotto rice of your choice, olive oil, salt and pepper and I finished my plate with freshly grated parmigiano, but it is optional. I sliced thinly the kabocha and the mushrooms. In a fry pan I heated a bit of olive oil and through the vegetables and roasted them until golden and crispy. Then I add the rice and grilled it a bit before adding water and salt. Let cook at low heat until the water is almost gone. Remove from heat and keep until you want to eat.
Before eating add a bit of olive oil, re-heat in the pan and stir softly if needed. Serve, add pepper, et voila!

A little soup

With some yellow carots, red carrots and normal carrots, some lotus root, some potatoes, and with some Italian beans soup mix that I cooked for lunch, I made for dinner this warm and rich vegan soup. Very very simple and so quick if you have cooked the beans before (optimally leftovers). In a large pan I put the cooked beans, water, quite a lot, and then cut the veggies and add them. I like both when it’s overcooked and veggies melt in the mouth, or when they are still crunchy, in particular the carrots, so I adjust the insertion time in the pan and the cooking time depending on that. I served warm, optionally with some gratted parmegiano, a good preparation foe our stay in Sicily!!!

Experiment

I was in the mood for a little cooking experiment: something in between an okonomiyaki and a galette, with plenty of veggies. Vegan, gluten/free, delicious and colorful. I used plenty of the veggies I had in the fridge: sweet potato, sato imo, lotus root, and carrot. I peeled and cut them then grilled them in a pan. In the mean time, I mixed buckwheat flour, rice flour and water with a bit of baking powder to obtain a quite thick dough. Then in a smaller pan I layed the vegetables covered them with dough and cooked at very low heat under cover then flipped it. And served. Use bulldog sauce like for okonomiyaki if you like.
