Bamboo shoot pizza

I know that may seems strange… but there are some associations that work perfectly and need to be more explored. The one I totally love is bamboo shoot/tomatoes that I discovered last year by chance. The other thing that I love is grilled bamboo shoots. It reminds me of the grilled thin bamboo shoots we had first harvested with our friends in Tsunan ages ago now… something like 2008… So thinking about how both tomatoes and grilled bamboo shoots could be combined, obviously pizza was going to be a great combo. It just needed to be made. So the night before I prepared the pizza dough with my sourdough. Classic bread dough recipe in which you add a tablespoon of sugar and a generous drizzle of olive oil. You leave it to work gently. And once we get back from surfing in the morning I rolled the dough a bit thick for maximum softness, sliced two tomatoes, a new onion, the takenoko and a local piece of cheese, all in the oven for about 20min at 220deg. Once cheese was golden and crust too, I took it out of the oven, cut and served with a drizzle of olive oil and a bit of ground black pepper. As simple as it is I like my pizza with just 2-3 ingredients in addition to tomato and cheese and I like mixing seasonal vegetables. Many of the Japanese local vegetables actually work well on a pizza. I had already tested burdock, now I know that takenoko is great too!

Pizza!!!

I don’t know why, but quiche and pizza are two things I could eat anytime. Winter, summer, with fresh seasonal vegetables, it’s always happiness in my plate!!!

Recently I haven’t kneaded much… week days are all too busy and weekends none the less but with different activities and more to come as our construction is almost finished and now I will have fun thinking about the new garden. 24h is way too short to do all I want to do!

I love to prepare pizza with the local products from Isumi, with all the cheese farms around making mozzarella, the local tomatoes and the variety of fresh vegetables, there is always something to put on your pizza to make it fancy. In the full summer heat now, okra are a nice option and they are particularly good when baked. Adding some fresh radish tops as the rucola season is over and you have a perfect summer pizza.

For the dough I always use the recipe from the Kayser bread book. But now that I know that I can speed up the kneading without affecting too much the result, I cam prepare pizza dough in no time. It’s simple, never fails and with the room temperature at 27-28 now it rises in 45min, so no need to plan too long ahead… so there will be more pizza coming soon I’m pretty sure!

Crepes or cookies

I wanted to talk about one or the other in my post today but I decided to do otherwise because my cookies recipe is great but the baking time wasn’t good (I slightly over baked them) so it needs another trial before being shared. And crepes… well… it was Chandeleur on Saturday and I thought about making crepes, but I didn’t have buckwheat flour anymore to make savory crepes so I made a few sweet crepes for tea time, but that’s not something special as I probably make crepes once a month or more. So today I wanted to talk cheese and pizza! Indeed, after all the beautiful sunny days I found some tomatoes at the farmers market. I assume they grew in a green house heated by the winter sun only. They were a beautiful red full of ripeness. I couldn’t resist… after all the winter vegetables, that would be different! They also had a little of rucola too, so instantly the idea of eating an homemade pizza came to my mind. And for that I needed some nice cheese, so we drove up to Takahide farm to buy some mozzarella.

We stayed to see the cows and the heifers, and we came back not only with mozzarella but with a new version of one of my favorite cheese there, in an aged version… simply delicious!!

Oh! For the pizza dough I use always the same recipe as here. It always works perfectly.

Bosso

As planned I didn’t have much time to write in the past days, busy with work: final grading, entrance exams, proposals to submit and research to supervise as usual though. And at home it’s been busy too, with friends visiting and a feverish A. to take care of. But the noticeable thing of this week is the turn in the weather and since the 16th it is definitely not summer anymore. Days have noticeably shortened, there is a cool wind and we turned off the cooler. It is perfect now for open drives, walks around the rice fields to watch rice harvesting and have lunch outside in the shade. And one place I really like, just halfway to Isumi from Tokyo, is the pizzeria Bosso by the lake in Ichihara. It is a small restaurant with seats indoor that have view on the lake and outdoor, facing the lakeside museum, there is a terrace shaded by wine with plenty of grapes, where you can eat the takeaway pizza. Not only the place is really nice, the staff is super friendly and nice, and the food always surprises me. They use local fresh products for the pizze, both cheese and vegetables. The Noka pizza (農家ピザ) uses plenty of seasonal vegetables thus changes regularly and I really love it, it is always a surprise! This time, on the cheese base there was a massive amount of fresh myoga, okra and ginger as in the picture below.

So if you are in the Ichihara area this place is a must try!!!! The nearby museum, the Ichihara artmix events etc.. are also worth a visit. My favorite riding club is also in the area.

Some kinds of pizza

I can’t realize that we are moving in 10 days. It’s seems so far away and so close at the same time, there is so much at work at the same time that it is hard to realize. I’m quite excited because I will have a new kitchen to play with and a bigger oven in Tokyo than my mini one. At the same time I will bring my mini oven to work, which means that I could cook more at work!!! Speaking of ovens, recently I’ve been making things that look like pizze but are not trully ones. May be I was inspired by the macrobiotic aburage (fried tofu) pizza I saw on IG by @rikako.salon_de_r. Once I made the base crust was a pie crust with whole wheat flour, topped with tomatoes, eggplants and red bell peppers, rosemary and olive oil (bottom picture). The second time I made a fougasse or focaccia preparation then topped it with blanched spinaches, cherry tomatoes and for those who like, fresh mozzarella from Isumi (top pictures).

These are perfect for still hot sunny days of September, using the last of the summer vegetables, good eaten just out of the oven or cold. 

Quick pizza

Finding some fresh rucolla at the farmers market suddenly triggered my craving for a vegan fresh pizza. Nothing more simple, with the delicious little new onions and the small very ripe tomatoes I had already. Making pizza dough for the crust is really simple, and with the warm weather the rising time and proving time are really short. This time I almost didn’t let if proof and the crust was thin and crusty, delicious.

Pizza dough

 – 170g of flour

– 6g of fresh yeast  

– 80g of water

– 15g of olive oil

– 5g of salt

– 1tbs of sugar

As for any regular dough, mix all the ingredients and knead until smooth. Let rise for 1h in a warm place. Work the dough on a flat surface and roll it to the size and shape you want.  

Now you can top it with whatever you want and preheat the oven at 200deg. For the topping I used small tomatoes halves and small new onion first, with a few drops of olive oil. I baked for 15min. Then rose the temperature to 230deg and baked an other 5-8min. Stopped the oven, add the washed rucolla and keep 2min in the hot oven before serving.

Vegan pizza

Rucola instaneously makes feel like eating a pizza, so I prepared a dough and a vegan pizza with just one fresh new onion, 3 fresh tomatoes and plenty of fresh little rucola. A slightly different version of last year vegan, the new onions bringing some creamy texture, perfect with the crisp of the fough. Unpredictability

Well, well, well, Friday evening after an other long day at work and a busy week, I was really happy to get back home, finish packing for the week-end and go and pick-up the car downstairs to leave.

It was without counting on a little unexpected event: damned new car with tones of high tech sensors and the ones measuring tire pressure… OK, so let’s put some air in the damn tire, drive a bit, decide that it’s not a good idea to drive to the country in the middle of a rainy night with a defective tire, park the car back and go back home with the luggage and just a bit upset: it’s rainy, and I can sleep one more night on my dream pillows!!!

Saturday morning we went to had our tire check: flat tire due to a vis!!! And while it got repaired we walked in a nearby open house village, you know these places where they have models home you can visit. Found a nice one and decided to visit, and got plenty of ideas and hints for the reform of our bathroom in Ohara, a thing that we’ve had in mind for a few years already!!! First nice discovery of the day!

With our repaired tire and ready to drive car we finally head to the country but we decide on our way to stop at Ichihara lakeside museum to try their pizzeria with view on the lake. They serve homemade pizze prepared with local products, and really enjoyed it: fresh, simple, delicious, and local! Perfect, second nice discovery of the day!

We then decided to have fun and drive the small roads of inner Chiba: Naka Bosso (中房総) and took the long way to Ohara. We discovered the beautiful Yoro valley, its old fashioned onsen and a very mountain like landscape and atmosphere, extremely different than the one of the Pacific coast, though it’s only 30km away!  A recommendation to enjoy soon the autumn colors and a good fun drive! Third discovery!

And we finally arrived home at tea-time, for which I quickly baked an apple tart with a thin sable dough and one apple thinly sliced on top, nothing else. This unpredictable flat tire just led us into a beautiful day!

Vegan pizza

After the super delicious trial of a classic homemade pizza, this time I decided to use the base of the pizza for a vegan pizza. Instagram inspired me a lot with tones of super delicious-looking vegan pizza. So here is mine: olive oil, fresh tomatoes and zucchini, rucolla for the finish, nothing too fancy, bug you know how I like to keep things simple. It was really delicious, not really a pizza for me, rather something in between a tart and a pizza, but really yummy!! And so easy to prepare in advance.
