Isumi pork 🐷 → Isumi ham

The city of Isumi has a special pork meat called Isumi pork (いすみ豚), what is special about it I can’t really say now but it is for sure delicious, very tender and juicy. But since they grow pork in the area, we were thinking it’s really a pity they don’t make ham (it’s really hard to find good ham in Japan in particular in supermarket in Ohara), until our friend S. visited us yesterday and arrived with some fresh ham, from Isumi!!! Super nice ham!!! So we decided to go and check out the place where to get some, a small meat shop near the railway and Ohara station. They have smoked ham and pepper ham. We tried both and both are amazing! Apparently the pork farm is apparently in Otaki. We will probably go and check what they have soon. In the mean time, we are really happy to have found some really nice ham and had some for breakfast with eggs and buckwheat crepes!!

Rice – お米

In Japan finding deliciouss Japanese rice to cook is not difficult, it’s like finding bread in France or pasta in Italy. Yet finding organic rice or at least non chemical rice is not so easy. There are only few places I know in Tokyo where to find some for sure and the one usually sold in supermarkets is not chemical free. In the countryside the “Eco” label is already a guaranty of better quality in terms of production, but I’ve hardly found it in the city. Isumi is one place that grows rice in Chiba and they have a rather big production, and I was surprised the other day to find something new on the shelf at the local cooperative: a 100% chemical free rice grown locally and sold in a nicely design package. So I had to buy it. I support all initiatives for local, chemical-free, environmental-conscious production and if possible aesthetical and sustainable packaging. I think this one has it all. I believe the packaging (who buys 2kg rice vag in the country???) is really targeted at Tokyo hipsters (even if there is nothing really as such) but I think there is something good in developing it, it just has to stay sizeable and not to become a crazy business which losses all the ethics and original purpose.

New rice – 新米

Today I’m traveling to Kobe for work and most of the way from the train window iT’s just rice paddies. Actually, the season for harvesting rice has started a few weeks ago in Isumi, but not everywhere yet in Japan. The beautiful yellow-green rice paddies that undulate in the wind are one by one being cut short.  The smell is also changing. When this season starts it is also the end of summer, and this year it’s pretty bad with a lot of rain. Really a lot! And it is also the season for new rice or shin-kome (新米). As new tea in spring, new rice is an important ingredient for Japanese. The taste of new rice is subtle and more refined than usual rice, but it is as much for its gustative properties than for its signification as a the mark of the beginning of autumn, which in Japan is usually long, warm and beautiful.

Almost every year I buy a bag of new rice that lasts pretty much a year in Ohara. I only buy organic rice or Eco rice (the yellow Eco mark on the right side of the bag on the picture). There are also many types of rice (kind of breeds) depending on regions, usually I like Koshihikari type (an habit I got from traveling to Tsunan where they mainly grow Koshihikari), but this time I picked a different type since it seems the Koshihikari has not been harvested yet. When still very new I use it mainly for plain white rice or little preparation, after a few months, I don’t bother anymore. 

Summer in Japan

Tokyo summer is hot and often humid but it’s an amazing season and it’s usually short (too short), with the peak of summer starting from the second half of July until usually the first typhoon of August. During the summer there are two things really important: summer festivals (夏祭り-natsu matsuri) and fireworks (花火大会-hanabi taikai). Recently we haven’t beeb to often to summer festivals, they’re often too early during weekdays (they usually start at dusk and last only one or two hours), too crowded on weekends.  For fireworks, well, it’s a bit the same actually. There are a lot of huge fireworks all around Japan, and we’ve seen plenty. In Tokyo: Arakawa hanabi, Sumidagawa hanabi, Edogawa hanabi, Tokyowan hanabi… are probably the most famous. We are lucky enough to live by the Sumida river and have an ideal view on Sumidagawa hanabi taikai so usually we would watch it from home. But this year we had the chance to watch also seaside hanabi taikai: the one from Ichinomiya, and the small one from our village Ohara. Big hanabi drain a real lot of crowd and require a real organization if you want to attend and see them properly, you need to secure a place to park your car/bike/bicycle, to secure a spot with a good view, and a return route. Taking the train is usually not an option, most stations around are either closed or just so crowded that it’s almost insane. How many times did we get caught in traffic, in crowd flows of drunken people, for me it spoils the whole event… Smaller hanabi taikai in the countryside are shorter, less impressive, more confidential but much easier for logistics and with a local family atmosphere that beat largely the the huge ones. Now, I definitely like that one better. The one in Ohara for example lasted only 30min, but we could easily access to the beach and find a nice and quiet spot to enjoy it. There are many all around Japan, I can only but recommend you to try!

And if you don’t have the chance to see a big one at least you can buy fireworks in any konbini and have your own little firework at home or on the beach) and that is a lot of fun!!!

Nashi – 梨

This fruit is always considered as an awkward thing by foreigners in Japan because the nashi has the shape and size of an apple with the skin of a pear and the flesh of something like a pear but munch more crunchy and juicy, with a mild and fresh taste. So basically nothing to compare really neither to apple nor pear. Nashi is the utmost fruit of summer with watermelon. When eaten cool it is so fresh and juicy that it is the perfect snack for hot summer days. It is also a good match for busy breakfast because it is so easy to peel and prepare. Well, you’ve understood I simply love nashi! And I’m awfully lucky because Isumi is a great region for nashi, with a lot of nashi orchards and tons available at the farmers market and local farmers cooperative.

In the past I did some trials such as nashi tart, nashi compote… It was good, nashi supports well being cooked but the taste which is originally very mild due to the high quantity of water doesn’t reveal much in cooking as apple or pear do. So now my recommendation is to eat it just raw, accomodated with other summer fruits, or just alone. So perfectly simple and so delicious!

Looking for delicious local cheese in Japan?

I think I have finally found the spot!!! 

The other day I was introducing some locally produced cheese by Komagata cheese factory in Ohara, the problem is that it’s not easy to find and so far I’ve seen it only at one of the local product retailer Na no hana. So that’s quite limiting. 

Sunday morning we went to Ohara market on the harbour. I thought it would be fish-only market but in fact it is a quite big (for Japanese standards) farmers market, selling also fresh vegetables and many other things than fishes. That’s where I found the stand for Takahide cheese factory. A farm higher inland in Isumi, near Kuniyoshi. Their cheeses look a lot like the ones from Komagata, with a little variation. I picked the Isumi white moon (いすみの白い月) and did not regret that choice. It is perfect!!!

Very much pleased with that choice, we decided to go and check out the farm directly. It’s a short drive from our house and a nice one among rice paddies and traditional farms. The Takahide farm is up a hill in a kind of group of dairy farms. There is a little shop where they sell directly, but the stock is not big and I recommend giving them a call before if you are looking for something specific because it seems they don’t hold stock very long and depending on the time not every thing is ready yet. They also sell fresh milk and seems to organize some events.

Where it is interesting for you, if you live in Japan and looking for delicious cheeses is that you don’t necessarily have to go to a big department stores or an import stores to buy some cheese from France or Italy anymore! Takahide cheese factory has an online shop where they sell their cheeses and fromage blanc!!! It’s not cheap but it’s really worth the try and it’s local at least.

Since cheese cannot be dissociated from bread for me, at least the cheese that you eat, right not the one to top pastas etc… I prepared a plain fougasse with just a little of salt to eat with the Isumi no shiroi tsuki cheese, a very good match.  And I tried their reblochon style cheese: Makiba no taiyo まきばの太陽 with a whole wheat bread. It’s just insanely good!

French in Japan

Finding delicious natural cheese, not industrial in Japan is not easy task. By pure chance, our country house in Ohara is very close to a cheese factory. Yes yes! a cheese factory in Japan! and not in Hokkaido!  But, sadly it is impossible to just go there and buy cheese… At least all my trials didn’t success. But, at last, I have found a place where to get some: Na no hana local products shop!!! They have a selection of cheeses from Komagata and so far what I’ve tried was really good. On the picture only the fresh one, because they have a selection of wilder things that are impossible to capture with a camera! Each was a perfect match to my cereal favorite homemade bread!
A French girl, even in Japan is still French!!! And if you love cheese there is still means to find some (took me 10 years though!).
