Craving for fresh pasta al pesto

This weekend Sunday I was looking forward for swimming in the icean and body boarding. We first wanted to go really early in the morning between high and low tide but we over slept and when we woke up at 7:30 it was already to close to low tide, and there nothing more boring than low tide: the water is shallow and very little waves for body bording. So we had to wait fir the next high tide that was later in the afternoon. At 16:30 I was really excited to go but there was no wave… Well at least we could swim… But the 22deg announced on the surf report was not too accurate and it was rather a 17deg, with a little chilly wind blowing… Swimming ended up by trying up to the thights and resigning… Back home… Frustrated… Looking at magazines and suddenly craving for pasta al pesto. The problem is that A. doesn’t really like pesto: no parmegiano allowed and no pune nuts either… So the best option was to do a tomato based one and to rapidly prepare some fresh tagliatelle (yes, I know, most normal people will just open a box of dry tagliatelle…). Now that I know really how to use my pasta machine it’s really easy to make whatever pasta in a short time and without having to wash the kitchen floor to ceiling for the flour eveywhere. So I made the tagliatelle, went to cut fresh basil in the garden, and added really plenty of little cherry tomatoes, olive oil, and that’s it!!! I wish a very pkeasant week!!!

Simple Japanese dinner

A simple piece of horse mackerel marinated in soya sauce and oven grilled; dashi blanched green beans and eggplants, white rice and umeboshi make for a perfect dinner in this rainy season period. Simple, tasty and colorful. I wish you a nice end of week! 

Umeboshi – 梅干し

The best way to enjoy umeboshi is with simple plain white rice in my opinion. Since I got a big pot of freshly made little shiso umeboshi from our neighbor  (mine are big plums without shiso), I really wanted to try them. I prepared simple white rice, and to make it a dinner I added a little of ginger grilled pork and some little radishes grilles too.

The plum are just freshly pickled and in their juice to they are salty-sour-sweet, very tasty and melting in the mouth. Actually they are delicious without rice too and now I understand why a Japanese traditional snack for kid is umeboshi. There are so many ways to prepare them and so many ways to eat them!!

Simmered plums

When I harvested the garden plums I had in mind to try one recipe of simmered plum from my Shojin cuisine book. So I kept 6 of the largest and greenest plums for that recipe. But busy with other things I didn’t prepare them right away and the plum have turned from green to a beautiful orange, and were ripening very quickly. So I decided to go for an other manner to cook them, simply preparing some kind of compote. I put the plums in ample water and boiled them at low heat for 2h under cover; then I drained most of the water and kept only 5 to 10mm in the pan, added 2tbs of brown sugar and simmered at low heat again for 30min without cover, or until almost all the syrup is gone. Instead I obtained a thick jelly (the brown paste in between the plum on the picture).

You can serve the plums warm, at room temperature or cold. 

Salmon soup

With the leftovers of the salmon filet and the Swiss chard I prepared a soup for our dinner tonight. Simply by boiling some little pasta (some Sicilian pasta for soup I had left from our trip to Italy last December) in salted water and adding the cooked fish and Swiss chard 3minutes before serving. Added olive oil and black pepper and served hot.

Asparagus and herbs ravioli

It’s been weeks I wanted to make ravioli and I totally felt in love with the IG picture of Zucchero e zenzero‘s ricotta and asparagus ravioli just before the golden week. The events during and after the golden week being what they’ve been I didn’t had a chance to make ravioli until last night, and because I found some nice local asparagus I decided to go for asparagus ravioli. Since A. doesn’t eat cheese I skipped the ricotta and used only basil and parsley in the filling. Super easy and really delicious.

For the pasta dough as usual 100 of flour or semolina, one egg, a bit of olive oil and salt. I rolled the dough up to number 8 on my Atlas 150. Thinner for ravioli is quite risky since the way I do it, my filling is not totally smooth. For the filling I blanched the asparagus (I kept the heads for later), drained them well, then add parsley and basil, and grinded all together manually. Then I just prepared the ravioli, boiled them and serve with olive oil, salt and pepper. Simple and too delicious we want to eat ravioli every day!!!!!!

Tomato and broad beans in broth

In Isumi they grow tomatoes that are super delicious and can easily compete with Mediterranean tomatoes. They just start to be in season and they are perfect for any kind of preparations, raw, cooked, grilled because they are well ripen, sweet and juicy. 

One thing I love to do with this tomatoes is to peel them and serve them in a broth made with dashi and a bit of soya sauce, sugar and vinegar. And because it is still spring, I added a few blanched and peeled broad beans. Served with delicious brown rice.

Quick dinner fix

I left work earlier than usual on Friday to have time to boil some potatoes and prepare our bags for the weekend because I knew that once we would arrive in Ohara we will be more busy with the kittens than actually thinking of having dinner!! And it was so true!!! First I had to do a bit of cleaning, then we played until quite late in the night with our four fur balls. Only to have dinner around midnight, when my boiled potatoes just needed to be peeled and cut in quarters, add an avocado diced, a handful of baby leaves salad, onr of fresh coriander. Seasonned with olive oil, salt and curry powder. So dinner could be ready very quick!

Oat bran pancakes

Since we’re spending the golden week in Ohara I’m cooking/baking every day for breakfast and with the weather being very unstable, this morning I wanted something new, something different in texture and taste. I was having some oat bran and thought it could be a good base to start with. So I browsed a bit for inspiration and found two things, first an idea for a recipe, second a nice website/app that I didn’t know about: yummly.com and seems very well designed to find recipes and inspiration. I’ve also started posted recipes there so I will probably keep you updated anout that soon.

As for our breakfast I prepared some oat bran cinnamon pancakes with using mainly oat bran to which I added a little of flour, baking powder, salt, brown caster sugar, one egg, soy milk and plenty of cinnamon powder. Stirred well and cook in a hot pan until golden. Perfect straight or with butter, honey, marmalade…
