Hum…

I’m not the kind of person who complains about the weather. I take it as it is and enjoy each day as it comes… I don’t mind the extreme heat, nor the cold, neither the snow, the wind nor the rain… as long as the weather changes regularly… but I think I have had enough of rainy weekends now… honestly since the beginning of June there as not been a single day without rain at some point, and every single weekend has been rainy if not heavily rainy… And usually on rainy weekends we do stupid things (that we never regret! Don’t get me wrong!). 7 years ago we started browsing internet and ended up buying our country house in a flash… sometimes we spend rainy weekends at an arcade and batting center, and last month we browsed internet again and bought a new car…

Oh yes… a car to go to the beach… well now I just wonder when we will go as a typhoon is coming just for the weekend of course. If I had an outdoor job I wouldn’t mind rainy weekends, but my job gets me stuck indoor 12h/day so I miss the rare sunshine…

What else do I do when it rains?

I cook… sweets… of course… to compensate for the lack of activity!!!

I bake and bake and bake… and this time it was coconut milk and white chocolate scones… which were perfect for both breakfast and tea-time! Simple recipes give often the best results: flour, sugar, baking powder, and then coconut milk, coconut oil, and white chocolate chips… that’s it… all mixed together, and baked…

Butternut squash week!

I know… last week I was already writing about butternut squash and as said, I bought a new one again this weekend in the countryside. One butternut squash a week when in season is a good pace for us. Combined with other vegetables it last the whole week. This time, after some classics, I am experimenting a little bit more with new ideas of recipes or preparations. After browsing my past post on butternut squash I realized it deserved a proper “week” as shiitake, zucchini , eggplant… had. So I have decided to go for a butternut squash week this week with 4 of 5 recipes using butternut squash that are new to me. For the past published recipes please look here (many of the pictures have disappeared during our migration, I am slowly working on fixing that).

Brown rice and curry double-tap

With all the fresh spring vegetables now available, in particular carrots, lotus roots, snap peas… and the weather changing quickly from sunny and warm to windy and chilly, a warm curry is always nice, accompanied with brown rice.

And with friends around I cook always much more than we can eat so I often have left over and brown rice makes a great base for a crunchy pie crust. So here are my recipes.

Spring coconut milk vegan curry:

– carrots

– lotus roots

– snap peas

– new onion

– red bell pepper

– coconut milk

– curry powder

– salt

– brown rice

Cook the brown rice in a rice cooker or in a pan at low heat under cover with twice more water than usual.

Was and peel the vegetables and cut them as pleases you. In a large fry pan or wok start by cooking the onion at low heat to soften them a bit, then add the lotus root, the carrots, the coconut milk and a tsp of curry powder, a pinch of salt. Cook at low heat for 10min. Add the red bell pepper and finally the snap peas. I like my vegetables crunchy so I try to avoid over cooking. Serve the rice and the curry together.

Brown rice quiche:

The base of this recipe is the left over from the previous, but you can start from the scratch.

– cooked brown rice

– flour

– vegetal oil

– sesame oil

– new onion, snap peas, and any other vegetables of your choice

– tofu

– eggs

For the pie crust, in a bowl mix the brown rice, flour and add a bit of water and vegetal oil and sesame oil to obtain a very granulated dough. Roll it on cooking paper to a thin layer the size of your pie dish, plus the sides.

Drain the tofu. Wash and cut the veggies (if using the leftover then it’s all set). Mix the tofu with the eggs, the vegetables and pour everything in the pie crust. Cook at 180deg for about 25 min. If you didn’t use the leftover you can still add coconut milk and curry to the tofu-egg batter.

Golden week

So, here we are, right in the middle of the golden week. All our friends have left and we’re planning to spend a few days doing some DIY and gardening. Having friends at home I spent a lot of time in the kitchen to prepare them my classics: breakfast with freshly baked bread, creamy scrambled eggs, local products: ham, fresh fruits… For lunch, it is more about vegetables and salads, and for dinner, since evenings are still chilly, cocotte cooked Isumi pork filet with new potatoes and angelica. And the little bonus for dessert: fruits tarts with coconut custard. All my recipes are meant to take the best of the local ingredients with simple preparations.

So here are my recipes:

Cocotte pork filet

– 1 pork filet, the size depends on the number of persons you are cooking for

– 2 large new potatoes/person

– a bouquet of fresh angelica (ashitaba)

– olive oil

– salt and pepper

Cover the bottom of your cocotte with 1mm of olive oil. Set the pork filet and start cooking at low heat. Brush the new potatoes undr water to remove soil and dust and the thickest skin. Cut them in 4, add them in the cocotte. Cook under cover for 25min, stir regularly. Wash the ashitaba, cut the hardest part. Add to the cocotte with salt and pepper, and continue cooking until the bottom is all golden, and stir a few times while cooking at high heat. Finish with a bit of olive oil to melt all the extracts. At the moment of serving cut roughly the ashitaba with scissors.

Coconut custard fruits tart 

The recipe is basically the same as here except that I  added some fresh coconut in the custard, and added mangoes to the strawberries. The result was 12 superb little tarts! I now often do individual fruits tarts to avoid having to cut them and damaging there beautiful balance and aspect. I also find it easier to keep them that way.

Strawberry tart, coconut custard

There is almost nothing as simple as making a strawberry tart, yet as delicious and pretty. It may look like a lot of work but it is not. I have my strawberry tart ready in 20min all included: from making the pie crust to washing the strawberries, including some nice new versions. In addition I’m trying some new features to share more ecperience, with a new youtube channel, where you will be able to see how to prepare some classic recipes. It is all new so I’m still trying to find the proper angle and tools, and sometimes I forgot to turn on the camera, but of you like it, I’ll put more. 

Strawberry tart with coconut custard

For one large tart for 6 people 

For the pie crust: same recipe as the plain petits sables lasr week

For the filling

– a little basket of strawberries  

– a pack of coconut milk or coconut cream (200ml) 

– 2tbs of sugar

– 2 egg yolks  

– 2tbs of flour

 In a pan heat the coconut cream/milk. In a bowl mix the sugar and the egg yolks. Add the heated milk. Stir well, then add the flour. Stir well again. Move back in the pan and cook at low heat until it gets thick.

Set in the pie crust a 5mm layer and thn add the strawberries on top. Ready to be eaten!!! 

Kaya cookies

Still with this coconut milk! It’s incredible how much you can try with just a can! I’ve had some nice tries and some that just didn’t work as they were supposed: coconut milk salted caramels. That’s how I ended up with a sort of kaya instead of the caramels. Delicious, addictive… My kaya is basically coconut milk and caramel that I cook to obtain something a little creamy and brownish. After that I mix flour, baking powder, I used a beat of wheat bran for the texture, a bit of butter and 2tbs of kaya. Stir well and make little coin size cookies that I bake 13min at 170-180deg. Simple and delicious though again the baking kind of weaken the coconut milk flavor.

Coconut milk and spices scones

Once the coconut can is opened, better use it! It’s really rare I use canned food but for coconut milk it is really nice (and for chick peas). The milk is really rich and creamy. So after I used a few for the curry I’ve been cooking with it a little bit. And first thing I dud was to prepare some scones for breakfast. I replaced the milk in the recipe with coconut milk. I added vanilla, cardamom seeds and some fresh gratted ginger. Baked and serve with some kind of homemade kaya: coconut milk cooked with sugar until creamy. It was delicious but it seems that the coconut milk loses a lot of taste when baked., so the spices gave most of the flavor to yhe scones.

Vegan coconut milk curry

Yes I know, the picture is not the most pleasant, but really taking pictures of risotto and curry is not an easy task! But both are super delicious! Since yesterday I had this recipe in mind and just tried it: perfect for our palates that don’t like spicy-hot food. It starts with simple brown rice, cooked as you like. Then I used 1 yellow zucchini, a handfull of shelled cooked edamame, fresh coriander plenty, a small bulb of fresh ginger, 4tbs of coconut milk, 1tsp of curry powder, salt, a bit of oil. In a pan I heat the oil and add the zucchini cut in chuncks (suze and shape you like), cook at high heat, when it starts to golden on one size I stir and reduce the heat. Add the coconut milk, the ginger gratted, the salt and the curry powder. Stir well, add the edamame. If the mixture is getting to liquid (water in the zucchini) add a table spoon of flour or starch and cook a little longer while stirring. Remove from heat and add the fresh coriander chopped, serve with the rice. Have a nice weekend!
