Weekend one-plate

Sunny weekend, fresh food from the market and the beginning of spring vegetables: na no hana. So I prepared a simple one plate with white and green rice, boiled daikon in dashi with yuzu miso, boiled na no hana in dashi with soya sauce and katsuobushi, grilled fresh bonito, and some little radish. All simple all delicious!

A little Japanese dinner

I love Japanese food but because it always requires several preparation steps: preparing a good dashi, marinating ingredients, multiple cooking… It is rare I prepare a genuine Japanese dinner, unless it is some donburi, like veggies on rice etc… But I really like cooking Japanese and with a bit of organization in 30min it is possible to have someting ready.

First, start with preparing dashi by boiling katsuobushi in water. I put the flakes in a net so that it is simple to use the dashi. Then prepare the rice and start to cook it. Finally start marinating what ever needs too, here for me fish in soya sauce. While everything above is set, prepare the veggies or other ingredients: here wash the spinach, cut the mitsuba, prepare the miso… Once the dashi is ready you can cook the veggies. I picked spinaches because they don’t need much time to cook. I just boiled them in a little dashi and drained them well. Then grill the fish, some fresh cod from Aomori, add the miso to the soup, set the mitsuba in the bowls, and when the rice is ready, serve the miso soup, prepare the spinaches balls, add some delicious yuzu-miso bought in Karuizawa (the whole purpose of this dinner was to try this miso!), served the rice and finish with the fish. Ready!!!

And the miso from Karuizawa was just awesome, sweet tasty and with the perfect yuzu taste. When it possible to buy some of these delicious products locally I see really no reason to try to make some!

Mushrooms, yuzu pasta

Sorry for this little break from TPS. Work has been really busy in the past weeks, often coming back home pretty late and I’ve also had some end of the year parties, and dinner out with friends, so these last days have been pretty low on cooking. I’m happy to spend the weekend in the country and to have time to cook. So today, for our post tennis game I prepared these nice fusilli with grilled mushrooms: shimeji and shiitake with fresh yuzu peel and yuzu juice, dressed with a little of olive oil, sea salt and pepper. A perfect lunch to continue with a few hours in the garden trimming trees and preparing for winter. Have a good weekend!!

Veggies sautéed with yuzu

Simple, warm and fruity, the perfect meal for a rainy day, when for the first time of the season it feels cold despite the light coat.

I prepared this recipe on the fly, adding ingredients while cooking. I first started with some potatoes diced that I started to cook in a bit of oil. Then I hesitated between red cabbage and cauliflower and opted for cauliflower, that I added to the pan. Inspired by the pale whitish color, I added half a yuzu squeezed, then some shiitake sliced. Once the potatoes were cooked I serve (the cauliflower and the shiitake can still be crunchy). I added the redt of ghe juice of yuzu and some yuzu zest. 

Yuzu and chocolate chips cake

Yuzu is one of Japan most famous  Citrus fruit, but actually there exist several varieties of yuzu: green yuzu with a thin skin, orange yuzu with a thick skin, all used at different seasons and for different recipes. The peels of orange yuzu are particularly delicious and candied it’s one of my weak points! It’s not always easy to find some natural ones, recently at the local shop in Koganei and in Isumi they have some, so I couldn’t resist. And I made a chocolate chips and yuzu cake for breakfast using the basic recipe of the pound cake, replacing the sultanas by the chocolate chips and the candied yuzu peel. A perfect start for the week! Have a good week!
