Summer plate

The very first days of sudden hot weather always make me happy but I have a hard time adjusting with the temperature and never know what are the proper clothing. I feel kind of feverish without being sick. When this happens I like super simple a freshfood, eating melon and grapes a lot, and preparing some very simple dishes. Brown rice is a real treat in that case. Simple to prepare, both delicious warm or cold, easy to accommodate with all the vegetables and herbs. I love shiso for its fresh taste and its herbal texture, thinely chopped and mixed twith rice is just a perfect match. As for the vegetables I take what is available on the market, and because we didn’t go to Ohara, it’s not that fancy: mushrooms, cherry tomatoes, salad. The dressing is a simple olive oil plus a bit of fresh lemon and a few drops of soya sauce. Simple as can be!

Cooking and baking, yes!

Finally the weekend, almost done with my administrative duties at the university, and also done with two crazy weeks of dining out. So the first thing we did when we arrived in Ohara was to rush to the local farmers market to shop fresh food, then I started baking and cooking!! Hurray!!  

Baking a big bread for our breakfast tomorrow; and cooking our dinner, something simple but fresh: plain white rice with fresh shiso leaves chopped; lotus root cooked in sardines dashi and then slightly fried; and bonito, just cooked in a hot pan. Back to simple and delicious homemade food, back to the country with our stray cats, back to spring with the frogs now in the rice paddies!

Simple summer lunch

When the temperature exceeds 30deg day and night I only can eat very simple food. Japanese rice is really delicious when it’s hot, and it suits very well simple preparations, without any fat nor dressing. Donburi is always a good and simple way to prepare a rice based perfect meal. This time you can’t imagine something simpler: plain white Japanese rice, fresh cucumber, grilled chicken breast chopped, and a lot of shiso leaves finelly cut, a few sesame seeds for perfection. Served with a glass of cold green tea. How do you cook when it’s hot?

One-plate dinner

Et voila! Busy weeks, long working hours, the one-plate dinner is back!!! 

Quinoa and bulgur for the energy, salad for the green, cherry tomatoes for the red, momendofu (hard tofu) for the white and a little shiso omelet fr the taste. Seasonned with just olive oil and we’re set.

Remember to always drain your tofu, and cook the omelet under cover at slow eat to avoid the flipping task!

Missing Japanese food

After a whole week in the US, I was cruelly missing Japanese rice and Japanese food. So I fixed this little dinner with rice, green peas and green shiso and shoyu-grilled Tachiuo fish (beltfish). Simple and perfect!

The rice is just steamed, in the last few minutes I add the fresh green peas, and just before serving I add chopped green shiso leaves. The fish is grilled in the oven with a bit of soya sauce and served immediately.
