Simple, warm and fruity, the perfect meal for a rainy day, when for the first time of the season it feels cold despite the light coat.
I prepared this recipe on the fly, adding ingredients while cooking. I first started with some potatoes diced that I started to cook in a bit of oil. Then I hesitated between red cabbage and cauliflower and opted for cauliflower, that I added to the pan. Inspired by the pale whitish color, I added half a yuzu squeezed, then some shiitake sliced. Once the potatoes were cooked I serve (the cauliflower and the shiitake can still be crunchy). I added the redt of ghe juice of yuzu and some yuzu zest.
Beautiful weather this Sunday morning, so we woke early and spend most of the morning in the garden cleaning and grooming shrubs, by the time we were hungry it was cloudy and chilly, so I decided to cook us a warm lunch and got once again inspiration from my macrobiotic recipe book. It’s a simple collection of veggies and koyadofu that are first cooked in water and soya sauce, then lightly fried and serve with rice.
In my version for 2, it is 2 pieces of koyadofu, 1 carrot, 1 purple sweet potato, 1 shiitake, and the rice is brown rice to which I added red rice, black rice and barley. I cut the veggies in four and boiled them for 7min in one cup of water where I added 1 table spoon of soya sauce, I also cook the koyadofu with the veggies. Then I removed them from the water and let them rest on kitchen paper to drain the excess of water. Then I roll them in rice flour and lightly fry them, and serve them directly with the rice.

This one is largely inspired by chef Georges Ennis (@chefgygglz) kale-nutternut-shiitake tart last week, but my recipe is much lighter, quicker and features no cheese (not that I wouldn’t like, but my husband yes). I like very much the addition of the kabocha, first visually, then tastewise because it’s soft and sweet.
For the dough I prepared a classic simple sable dough that I rolled thinly in a large circle to fit my tart dish. I washed and sliced the mushrooms: shiitake, shimeji, oyster mushrooms and cooked them in a bit of olive oil and salt. I then topped the pie crust with them. Added 1/4 of kabocha thinly sliced. I finally prepared a batter with eggs, soya milk, salt and pepper and added to the rest of the tart. I baked the tart 30min at 180deg. You can serve warm or cold, both are delicious!
This something that I never cook but that I actually love a lot. Pies are so delicious and so easy to make. And just like tarts there are so many variations that everything works! What I like very much with pies compared to tarts is that 1. You don’t need the egg base, 2. The filling is kind of steamed in the pie so it doesn’t dry, 3. The double layer of dough!! When I started this recipe I was thinking of a tart first but I changed my mind on the way and decided to make a kind of coca or calzone, and finally it turned out being a pie! That’s why the shape is not very pretty because I was rolling the dough in a different shape at first.
For the filling I used hard tofu, drained, shiitake cut in cubes, and chicory leaves (well I am not perfectly sure about what it is actually, but it something like chard). For the dough I used spelt flour, water and butter (which can be replaced by vegetal oil). I split the dough in two and rolled quite thin, but not too thin. I set one in a pie dish, add the veggies and the tofu (as on the picture) then cover with the second one, close tightly the edges together, made a small hole in the middle and added a little cheminey in cooking paper. I baked in the oven for 40min at 170 deg. Serve while it’s still hot. Bon appetite!
Once I’ve made a delicious bread, I like to eat with different things and I really love vegan spreads because it’s an easy way to prepare and keep veggies for a few days. I’ve had in mind making some mushroom spread for a long time now, but never did before. But the other day we went for lunch to a nice Japanese macrobiotic cafe and I bought a recipe book where there was a recipe for a spread. So largely inspired by this Japanese recipe, I changed it to suit better my bread. So it turns out being a mushrooms-olives-thyme spread. It’s simple and delicious.
I roughly cut the 150g of mushrooms of all sorts: here fresh shiitake and shimeji, and cook them in a bit of oil. Then in a food processor I mixed the mushroom, pitted black olives (just a large table spoon), salt (adjust the amount depending on the olives), and thyme leaves (3branches, so probably the equivalent to one tea spoon). Add a little of olive oil if necessary, process to puree or chopped as you like. I put the paste in a bin for easy handling. Ready to serve and you can keep it a few days in the fridge. Perfect with my original bread for example!
For a slightly more elegant plating, the mushrooms tart is also nice in individual little shapes, with simply the dough and the veggies on top. And served with a little kabocha purée in a Parmegiano millefeuilles.
The dough of the tart is again using a base of chesnut flour. For the kabocha purée I just washed and grilled under cover kabocha cut in pieces (with the skin), then mashed them with a fork. I then cut slices of vintage parmegiano and make layers of kabocha purée and parmegiano.
Again mushrooms on the menu and sure more to come! I simply love them all! This time a big combo of shiitake, white shimeji, maitake, mushrooms, eringi slightly sautéed, then mix with tofu and eggs and set in a chesnut flour dough. Topped with a bit of grilled bacon if you like. A delicious tart with sweetness and crispiness of the chestnut dough that perfectly contrasts with the filling!
When we have visitors from Europe for dinner and it’s there first time in Japan I usually cook Japanese for them, but I cook what I call “soft Japaanese”. I don’t try to impress them with my skills in cha-kaiseki cuisine with elaborated tofu mixes, plain white rice and strongly miso tasting fish and Japanese sweets for example. I prefer to introduce them to flavors their palate can identify and distinguish if they don’t. And if they come on week day, since I don’t have the luxury to spend more than 2h for grocery shopping+cooking, I need to be very organized.
This time our guests have been in Tokyo for a few days already, and travelling the world before arriving there so I crafted a menu where they can enjoy Japanese food while still feeling the casual home made touch:
somen with a chicken meat ball as a starter, ginger grilled pork (buta shoga yaki) with white and whole rice, miso soup with silky tofu and mitsuba. for dessert, just fresh summer fruits in salad: Japanese grape, Japanese plums and Japanese green melon.
If the main dish and dessert are quite common, for the starter I composed a recipe from cha-kaiseki and adjusted it to the market. The original recipe is using snapper and togan, a kind of summer gourd; but I couldn’t find neither so I replaced the fish with chicken meat balls made out of grinded chicken breast and startch, boiled in konbu dashi, and the togan was replaced by thinly sliced cucumber. The whole thing seasoned with a few drops of soya sauce. And I added two slices of dried shiitake. Since it is almost summer I chosed somen and served the whole refregirated. Bonus: since It is refrigirated you can prepare the bowls and just take them out of the fridge to serve!
Since spring has decided to go away and winter is back, I wanted to eat a warm and thick mushrooms tart. I made the dough with buckwheat flour and olive oil (not an easy one to shape) and for the rest a mix of fresh shiitake, fresh sort of shimeji, a big block of silky tofu, 2 eggs and thyme. I put everything in a deep pie dish to obtain a thick tart, about 3cm high. All in the oven for 30min and ready to eat just out from the oven. Nothing too innovative but always a warming choice.
