Crepes or cookies

I wanted to talk about one or the other in my post today but I decided to do otherwise because my cookies recipe is great but the baking time wasn’t good (I slightly over baked them) so it needs another trial before being shared. And crepes… well… it was Chandeleur on Saturday and I thought about making crepes, but I didn’t have buckwheat flour anymore to make savory crepes so I made a few sweet crepes for tea time, but that’s not something special as I probably make crepes once a month or more. So today I wanted to talk cheese and pizza! Indeed, after all the beautiful sunny days I found some tomatoes at the farmers market. I assume they grew in a green house heated by the winter sun only. They were a beautiful red full of ripeness. I couldn’t resist… after all the winter vegetables, that would be different! They also had a little of rucola too, so instantly the idea of eating an homemade pizza came to my mind. And for that I needed some nice cheese, so we drove up to Takahide farm to buy some mozzarella.

We stayed to see the cows and the heifers, and we came back not only with mozzarella but with a new version of one of my favorite cheese there, in an aged version… simply delicious!!

Oh! For the pizza dough I use always the same recipe as here. It always works perfectly.

Zucchini cake

Somehow this week has been a lot about cooking zucchini. There was a few classic things such as “soupe au pistou” for friends coming for dinner. But also a few new recipes such the salsola quiche. And after seeing a few cakes on IG, I thought it was time to make one with zucchini and rucola. The recipe is very simple and the zucchini bring the moisture often missing in savory cakes. I added rucola for a bit of fresh taste, and served it with a simple herb salad. A perfect dinner, all in one plate.

Zucchini cake:

– 1 zucchini

– a handful of rucola

– 150g of flour

– 1tsp of baking powder

– 3 eggs

– 1/2 cup of olive oil

– salt and pepper

In a bowl mix all the ingredients for the dough. Wash the rucola and the zucchini. Cut them. Add to the mix. In a greased cake dish pour the mix and bake at 160deg for 30min, rise the temperature to 190 for the final 5-10 minutes. Check with a knife if ready.

Rucola lasagna and farewell TPS

You may have realized that for quite a while Tokyo Paris sisters was a lot of Tokyo and nothing from Paris. Well indeed… it seems that after a few years it is now time to move on and for the sisters to split. So after waiting for more than 6 months I have decided that it is now time to end this joint work. Of course, I will still be cooking and posting personally on IG and I am thinking about restarting my original food diary, but it will be only me. I will keep you updated about the new link and place where you will find me, with a revamped website and new format.

The last recipe is really simple but very very delicious, light and fresh, perfect for a spring day, unlike today.

Rucola and mozzarella lasagna

Make some pasta, or use dry one that you need to boil first. Wash and chop some fresh rucola, slice a mozzarella. In an oven dish pour some olive oil, add a layer of pasta, a layer of rucola, a few slices of mozzarella, repeat 3 or 4 times, finish with olive oil, salt and pepper. Bake at 200deg for 15min. Enjoy! 

Life in Florence

So, it’s been four days we’ve been in Florence, except for Sunday that we spent walking around the city as described here, it’s been a rather studious time. A. leaves early in the morning while it’s all dark and comes back late at night, and this gives me more than plenty of time to work, write and spend a little hour or two outside walking around the city in the cold and shopping for lunches and dinners.

I’ve now explored both the San’Ambroggio market and the San Lorenzo market, got to see everything twice or thrice to decide what to buy choosing between all the delicious cheeses, fresh pasta and all the fruits and vegetables that are alien to Japan. I must say that I passed on fish, not being fully satisfied with the stands and on meat as there was too many options and I am not good with meat too much… but I guess that I will have to try some for A.. For the moment I’m sticking to speck and San Daniele and it’s been perfect. I also got my tea from La Via del Te as recommended by Giula from the beautiful Juls’ kitchen. And really I am more than happy with my little kitchen and the simple cooking I can do!

So far the things I have really been enjoying are the greens: I packed on lamb’s lettuce, rucola, zucchini, fennel and artichokes and I have been using them in many various preparation. My best being this delicious dish of pasta with olive oil roasted fennels and zucchini and topped with rucola. It is so simple and so fresh, and so easy to make, that here is my recipe:

Pasta with zucchini, fennel and rucola (for 2)

– 125g of pasta

– 1 zucchini

– 1/2 fennel

-1 handful of rucola

– olive oil, salt and pepper

– additionally some fresh parmigiano or some other cheese

Boil the water for the pasta and the pasta. In the mean time, wash and cut the fennel and the zucchini, and in an olive oil greased frypan cook them, but not overcook them! Add the drained pasta, salt, pepper, and olive oil, top with rucola and stir, serve immediately. Add cheese if you like!

New desktop favorite

I try to play tennis at least twice a week during lunch break, which means then that I need a quick, energetic and easy-to-eat-while-working lunch. So I have developed new sandwiches slightly faster to make than my usual desktop lunches (here and there). Instead of the big slice of bread I now use the bread I was using this summer more often: whole wheat small slices that when cut in two make a perfect size to handle and 3-4 bite. I have moved away from cream cheese for cottage cheese more often even in winter for a good dose of proteins, and in the middle I add whatever I find: mushrooms are still a good choice that goes well with the rest, tomatoes too but it’s not really the top season for that. I just tried cucumber and rucolla, plus a few pumpkin seeds and it was really delicious. And I’m sure I will find other things to try that takes only 3min to prepare. Lunch on the desk

When busy weeks with visitors and eating out are followed by busy weeks preparing lectures, writing big grant proposal and traveling I need lunch that are quick, light and fresh, but full of energy and tasty. I am lucky enough to have a space in my office where I can prepare rudimentary things, and usually I would go for avocado-cream cheese-seeds on bread or bagel. But somehow I got tired of avocado and of seeing them everywhere on IG and in magazines. So this time I’ve opted for something new and more seasonal: an open sandwich with raw zucchini (the season is just starting), rucola, basil, fresh mozarella, a bit of olive oil, salt and pepper. That was a super boosting lunch! What is it you like to eat when you are busy?

Vegan pizza

Rucola instaneously makes feel like eating a pizza, so I prepared a dough and a vegan pizza with just one fresh new onion, 3 fresh tomatoes and plenty of fresh little rucola. A slightly different version of last year vegan, the new onions bringing some creamy texture, perfect with the crisp of the fough.
