One-plate salad

This morning the farmers market showed me once again that it is not clear which season we’re in!!! The transition seems to take an unusually long time and daikon and cabbages were lined together with strawberries and new wasabi leaves. It gave me the idea to prepare us a warm/cold salad with warm green lentils from France and thick fried tofu, fresh tomatoes and wasabi leaves, with an olive oil and soya sauce dressing and finished with a few sesame seeds!

Weekend one-plate

Sunny weekend, fresh food from the market and the beginning of spring vegetables: na no hana. So I prepared a simple one plate with white and green rice, boiled daikon in dashi with yuzu miso, boiled na no hana in dashi with soya sauce and katsuobushi, grilled fresh bonito, and some little radish. All simple all delicious!

Short but intense week

Yup!! Today is the last of the week for me!!  But squeezing in a whole week of work in 3 days is quite a challenge. Plus this is the end of the year for students in Japan and that means a lot of thesis reading, preparation for presentations and grading. So from 8:00 to 22:00 it’s all busy. Adding a few round-the-world meetings late at night and the cup is full. So we’ve decided to retreat for a few days in the mountains, probably snowboarding, ice skating and hiking. Being so busy is ok for me, it’s kind of normal, but having to break my sleep habits is really the worst for me. My body stops to regulate its temperature and I feel cold often. So last night I wanted a warm and fresh, soft and crispy, colorful, and ready in 10min. It turned out in a one-plate with steamed spinach, sautéed shiitake, raw celery, chickpeas and creamy boiled eggs.

It’s incredible the sudden change in temperature and weather, one day is winter, one day spring. Some of the plum trees in the garden ate already starting to bloom which is incredibly early. So for the food it’s one meal winter one meal spring and a colorful is always welcome and with a beautiful red cabbage a plate is always a feast, with tomatoes, baby leaf salad, avocado, whole rice and scramble eggs with sesame.

So what did I get for dinner this week?

Refraining myself from cooking and letting my husband take over I feared that my dinners would invariably be pasta-steak. Hum… Not really my cup of tea… But hopefully with a fridge full of delicious veggies I got plenty of nice things and he cheated once by taking me out. Probably the most elaborated dinner was this soba one-plate with sautéed zucchini and sweet pepper, green beans and tomato, just seasonned with soy sauce. Thanks darling for this week! 

Smoked tofu one-plate

I was about to buy momendofu (firm tofu) for this one plate dish when a pack of smoked tofu attracted my sight and I ended up with it. All the way back home I was wondering when I had smoked tofu last and how it was, but I couldn’t really reacall. Probably in a vegan preparation back in France, but I wasn’t even sure. Since I had in mind a one-plate with half-brown rice from Camargue, avocado and salad, I decided that I would just dice it and add it to the plate. Well, it was a nice combination, smoked tofu has a very strong and particular cheesy taste which suited well the other ingredients. I still think it would suit better smaller quantities or different preparations. Fresh tofu in Japan is so delicious that the smoke version doesn’t make too much sense I felt.

And an other salad/donburi/one-plate

I’m in a constant quest for new food combinations and freshness, while at the same time I keep things simple and try again and again. That’s what I love about cooking: nothing exactly the same but yet not completly different. Always delicious because I cook what we love. And so many chances to try since we need to eat a little every day, right?

After loving my bulgur donburi, I decided to try a Japanese rice one-plate. I love the combination of the crispy chirimen and the creamy avocado, so I used that base, added some sesame seeds for the taste. Since rice is drier than bulgur and I don’t like to use any dressing with it (it makes it slippery abd impossible to eat with chopsticks) I just added some juicy tomatoes and fresh cucumber. An other delicious and refreshing combination!

Feels like a Sunday

Yesterday was holiday, and when Monday is holiday I get lost in the days of the week we are, so I have the impression there was two Sundays this week! Not bad! 

Spending one more day in the country, swimming in the ocean in the morning and fixing things in the house at the hottest hours didn’t give me to much time for cooking. So I fixed a rapid one-plate lunch with raw tomatoes and sweet peppers, boiled eggs, soft bread that I made for breakfast and that leftover, for the dressing drip-yogurt (I’ll explain in a later post), salt and pepper. It made a super delicious “open sandwich”.

Spending the week-end in Tokyo we’ve been eating out a bit and I’ve had time to do some cooking reading, and it inspired me for this vegetarian one plate (though eggs are optional and it can turn out vegan easily). I boiled 2 new potatoes, 1egg and 3 asparagus, and 3 okras. In order to spare time, I first put the potatoes in the boiling water, washed but with peel. Then when the potatoes are half cooked (I use a little bamboo toothpick to check) I add the egg to hardboil, after 4min I add the hardest part of the asparagus and after 1min I finally add the head of the asparagus and the okras. After less than 1min I drain everything and rince in cold water. In a bowl I roughly cut one avocado, the egg, the hard parts of the asparagus, mix with a bit of olive oil, salt and pepper. In a plate I slice the potatoes, mount the avocado-egg-aspara mixture in a circle and line the okras, finish with the asparagus heads, a bit of olive oil and salt. Bon appetit!
