Polenta “pizza”

Maybe it’s because we’re going to Italy soon, maybe just because I love it, but there are two things I am craving for: Italian food and Japanese food. So I alternate Italian inspirations and Japanese ones, and sometimes mix the two. When you need a rapid base for dinner polenta is much better than rice. It cokks in no time and it is very versatile and fun to arrange with many vegetables. One of the things I like to prepare it with are mushrooms and tomatoes. Somehow very classic. But you can give it a twist and prepare it like a pizza (vegan, gluten free). Here is my recipe!

Polenta pizza (4 servings)

– 100g of polenta (more or less depending on the size of your pie dish, the thickness of the polenta you want etc…)

– 2 large shiitake or 5 small

– a bundle of rucola

– a hanful of cherry tomatoes

– a branch of rosemary

– olive oil

– salt and pepper

First cook the polenta, you want it slightly dry to hold when it is cold but not undercooked.  Then pour the hot polenta in your olive-oil greased pie dish to obtain an even layer. Since I’m making a “pizza” I don’t want it to be thick, but neither too thin. 5-8mm is the right thing for me. Let it chill. Wash the vegetables and cut them. Add a bit of olive oil on top of the polenta, rosemary, salt and pepper. Then add the tomatoes and shiitake. Pre-heat the oven 30min before serving to 180deg. and cook the polenta and vegetables. Finally when done, just before serving add the rucola. That’s it!

Soba salad

I’ve been so busy at work running from one place to an other and with some tension when our robot was making its debut on stage, and with the moving that I barely cooked and even barely thought about writing a post to share with you a delicious recipe. .. for which I must apologize!

But as little as I cooked I still found some very nice combinations for a simple Japanese meal that can be prepared everywhere else than Japan since the ingredients are easy to find. What you need is a pack of dry soba noodles (I use only 100% buckwheat flour noodles, but it’s up to you), some green beans, a few fresh okras, some spinaches or mulukhiyah, a piece of fresh cod fish, soya sauce, 1 kabosu or 1 lime. That’s it! Blanche the spinach, the okra, the green beans and bath them in very cold water. Grill the cod in a slightly greased frypan. Boil the soba and bath them in cold water. Squeeze the kabosu or lime, add the same volume of soya sauce. In a bowl add the soba well drained, dry with a cooking cloth the vegetables, cut them and add to the soba. Top with the cod that should crumble. Finish with some dressing. Enjoy!

We are still on the road both by car and by foot with A. And after Tsunan, Hakuba, Azumino, Matsumoto, Kamikochi, Takayama, Gero, Ena we are now in the Kiso valley, or rather on the old road Nakasendo, in a very nice little inn where we are the only guests and very well taken care of. Our hike today, shortened by the heat has taken us to Magome juku, an old post town on the Nakasendo, one of the roads widely employed to travel between Kyoto and Tokyo in the past, a still very well preserved place with very picturesque views and old houses. Back at our inn: Shinchaya, our host had prepared a huge dinner as could be expected in every minshuku and ryokan. What is great with minshuku compared to ryokan is that it is more homemade-like food and easy to get recipes directly from the cook! This time the nice surprise was what is called yakimochi – 焼き餅 but it is not made of rice! The recipe is quite simple and the results quite delicious!

– a few taro – 里芋

– buckwheat flour

– salt

– soya sauce

– fresh ginger

Boil the taro, and peel them. Mash them with a fork, add some salt and the buckwheat flour to obtain a smooth mix. Make paddies with the mix and grill them (oven, pan…). Peel and grat the fresh ginger. Serve the grilled paddies with soya sauce and the ginger.

Experiment

I was in the mood for a little cooking experiment: something in between an okonomiyaki and a galette, with plenty of veggies. Vegan, gluten/free, delicious and colorful. I used plenty of the veggies I had in the fridge: sweet potato, sato imo, lotus root, and carrot. I peeled and cut them then grilled them in a pan. In the mean time, I mixed buckwheat flour, rice flour and water with a bit of baking powder to obtain a quite thick dough. Then in a smaller pan I layed the vegetables covered them with dough and cooked at very low heat under cover then flipped it. And served. Use bulldog sauce like for okonomiyaki if you like.

Experimental tart

I was running out of flour and wanted to prepare a leek tart, so I made a little experiment for the dough and give a Japanese twist to my tart. I prepared the dough with rice flour (2/3) and soy flour (1/3), vegetal oil and soy sauce, and of course water. The mixture was incredibly soft and nice to work, so I made a rather thin dough. For the leek it’s Japanese thin ones, so I just halved them and set them in the dough. I baked for 30min at 180deg. 

The result? Taste-wise it was just somptuous, a mix of crispy, melty, juicy and dry. Amazing! Plating and eating wise: the sides of dough were really crispy, so hard to make a clean cut. The whole length leeks are difficult to cut, so not optimal. Need some work here, but couldn’t help sharing the recipe of that delicious dough, very likely perfect with shiitake and other Japanese vegetables.

Chestnut and soya flour bread

Since I’m still trying a few cheese from the Komagata factory, I wanted some bread to eat with. The problem with bread is that it takes at least 3h30 to have something ready to eat assuming that you have a room heated at about 23deg… Knowing that Japanese houses are not well isolated not even well heated, and that it is freezing cold recently, making bread is more about 5 or 6h… Not something you improvise. But this chesnut and soya flour bread, since it is gluten free and don’t need to rise can be ready in 90min!!!! (Recipe from my bakery bible) Wonderful! And not even quick it’s super delicious. It’s quite compact and sweet, with a good taste of chesnuts. Perfect for the cheese I was trying this time!!!
