More deal!!!

Remember, last week our little old neighbor gave us some of her special ginger and goya preparation. 

Since I harvested to many persimmons (and there are still plenty to come) and I don’t know what to do with all these, I gave her a few and then she came back with more of her special pickles and preparations. So this week I managed to deal with her to teach me how to prepare the goya and the ginger, so hopefully I’ll share with you that very soon. She also gave us umeboshi and pickled myoga. Super delicious with plain rice! And plum jam. I’m looking forward to June, the harvest season for plums! This time I want to try to make umeboshi too!!!

You may remember that I gave away to my neighbors my gingko nuts because there were really too many.  So to thanks us our little 84 years old neighbor prepared us some nice Japanese traditional condiments and brang them to us timely just before lunch, so I just had to cook some rice. There were three different preparations: ginger in vinegar, candied ginger in soya sauce, and gobo simmered with mirin, sake, soya sauce, sugar and small fishes. All of them were really delicious and now I want so badly that she teaches me how to prepare these!!!!

Persimmon jam

In Japan, persimmons are quite popular and common. Everywhere in the country at that season you can see their trees with little or no foliage, just magnificent orange fruits against the blue sky. And this year there are so many fruits on each tree that it is really amazing! There exist a few varieties from the very sweet used in different recipes more often in salty versions, to the sour ones (shibui kaki – 渋いカキ) used dried: hoshi kaki (干しカキ). Since the season is just starting there’s going to be many opportunities to prepare persimmons.

In our garden we have three persimmon trees, two sweet and one quite old sour one. I don’t use the sour ones I leave them to the birds, because old ladies from area told me that Ohara is too warm to dry kaki properly without them rotten. But I use the sweet ones in several recipes. And this year because there are so many I’ve decided to make jam and jelly. I used only persimmon, brown caster sugar and a bit of agar agar. I peeled a dozen of persimmons, cut them in pieces, remove the seeds, add a bit of water, brown caster dugar and cooked at low heat for 1h. In the last few minutes I added a bit of agar agar because I had no natural pectin to really make it jelly like.

I then prepared the bins and and wait until cold to try on my original bread! I’m not very much used in making jam and preserves so I’m still learning, but the persimmon jam is nice, but as expected the taste is very subtle. I may have tried to add some flavor with vanilla beans may be. I made two variations: one pure jelly, and one with large chunks of fruit as on the picture. So if like me you have plenty of persimmons that could be a good manner to use them, if not I wouldn’t buy any to make jam with, unless you have a better recipe than mine, which I’ll be very happy to try because I’ve only harvested a 10th of our persimmons yet!

Gingko nuts rice

There are several ways to use gingko nuts in cuisine. The simplest is probably to grill them, for that you just beed to break the hard shell roughly, grilled them in a pan and serve with salt. It’s the easiest because no need to remove the hard shell, everyone does while eating. Perfect as a snack. But definitely not the most elegant way. So first if all renoving the shell without breaking the nuts is important. It’s not too difficult. Then there is a brownish skin that you don’t want to serve. To remove it it’s easy, boil a dew minutes the nuts then roll them in a metal net or drainer. The peel will go away with the friction. Now you have the perfect yellow nuts that you can use for any recipe. One of my favorite use issimply with white rice, to accompany a Japanese dinner. Jusr add the nuts in the rice after it is cooked. Count 3 to 7 nuts per person. Finish with a bit of salt when serving to enhance the taste of the nuts.

Ginkgo nuts – 銀杏

The ginkgo tree is a symbol of wisdom and it is particularly beautiful in late november when it turn a vibrant yellow. Its leaves have also a very pretty and typical shape, symbol  of Tokyo University.

But ginkgo are doomed because they bare the most ignominious fruit: the ginkgo nut. If you have ever tasted ginkgo nuts you probably can’t imagine where it comes from; if you have ever been close to a ginkgo tree in autumn you probably can’t imagine that the ginkgo nut is actually edible. The ginkgo nut is protected by a yellow-orange thick and watery skin that when broken generate an extremely nauseous smell. The nuts have the bad habit of falling on the ground and get smashed by pedestrians, cars… in town and to rot in the country, still smelling so bad that the tree is a real nuisance! Yet gingko nuts are delicious! 

The nuts are usually collected once they’ve fallen. Luckily the little typhoon that passed over Kanto last week, blown down all the nuts and I managed to collect them before they rot and stink. Always use gloves when collecteing the nuts!!!
The next step is to remove the stinks. For that plunge the nuts in a bucket of water for a few hours. The soaked skin is easy to remove (again, use gloves). And brush and wash the nuts until none of the flesh is visible. Finally dry the nuts in the oven at low temperature for about 2h, while shaking them once in a while. This year I collected so many nuts that I gave away most of them to my neighbors because I didn’t have the time to peel and wash them all.

Now the nuts are ready for cooking and harvesting!

梅酒 – umeshu

Prunellia’s post on her favorite Japanese drink is timely because it is just the season to harvest plums and to prepare umeshu. In our garden we have a lot of plum trees and each year they produce a lot of fruits. Last year for the first time the fruits were harvested and used to prepare umeshu. As Prunellia mentioned, Umeshu is prepared from still green plums and usually with shochu (a white traditional alcoholic drink made of rice, potato, sweet potato…). The recipe used here to prepare the Umeshu uses nihonshu, which is regular Japanese sake or rice wine and gives a milder taste to the preparation. I’ve got the recipe from a  lady living nearby. Actually last year she prepared the umeshu with our fruits, but this year I was very much tempted to prepare some myself, so she gave me her recipe and helped me out for my first time.

The recipe is really simple, but be aware unlike a lot of alcoholic  preparations that are ready in 60 or 90 days (peach wine, verbena liquor… that I used to prepare according to my grand mother recipes), this one takes a whole year (you can try earlier but one year guaranties the best taste/color). 

You need Japanese hard plums, rock sugar, sake or shochu, and a large jar (usually plastic or glass) with a tight lid and a big mouth to fit the plums in. First wash the plum and remove the stems, then wash again and dry them properly. Weight the plums that can fit 3/4 of the jar, weight the half amount of rock sugar. Clean and dry perfectly the jar and then pick the plums with a fork a few times around and make layers of plum and rock sugar until the 3/4 has been reached. Cover with the sake or shochu up to 2-3cm higher than the level of fruits and sugar. Close the lid tightly, store in a cool and dark place for almost a year. Once in a while you can shake the jar to help the sugar melt.

Apple and loquat tart

In the very back of our garden we have a loquat tree. Most of the time it is impossible to eat any because the birds eat them much faster but this time I manage to save two! Loquats are a little lique apricots, but with a much milder taste and I really love to it them raw or prepare tart with them, just as apricot tart. Since two loquats is not going to be enough for a tart I decided to mix them with an apple and to make small tarts with just a brise dough with very little butter, oat bran, brown sugar and water, and add some apple sliced and half a loquat on top. This ultra simple recipe allows to fully enjoy each ingredient without any addition, the loquat brings a juicy note to the whole thing. The oat bran some granulosity to the dough without having to add an egg.

We’re lucky to have a garden full of trees and flowers that grow without too
many difficulties. Every year at every season there is something to pick
in the garden. Last week I just picked the last tangerine, now we have
plenty of a sort of grapefruit (a little more sour). This year they are
particularly soft and sweet so they are delicious in juices and hot
lemonade.
This morning I just picked one for some fresh squeezed juice.



Yet, there are so many of them that marmalade is always a good way to enjoy them all year long.

For the recipe I use a British one of course (from the Guardian) a little modified since the fruits from the garden are not oranges, 1kg of brown sugar, 700g of fruits, 1.25L of water. Depending on how it sets I usually add some apple pips, this time it was not necessary. It made 7 jars. Can’t wait to try it with some good home-made bread!
