New potatoes omelette

For the first time in a week my head didn’t spin and seeing the world so still is quite strange now! I kind of got use to living in a spinning boat and adjusted to it. My appetite is coming back too! But I still prefer to eat simple food. So I made a new potatoes omelette. Some kind of comfort food. I just used two new potatoes washed and brushed that I cut in small cubes and cooked in olive oil until golden, then added 4 eggs beaten with black pepper and salt and cooked under cover. I flipped the omelette when the top is almost dry and cooked a little longer before cutting and serving. Really nothing amazing about that recipe bit honestly delicious.

Spring in the plate!

It’s getting warmer, out the winter coats! And the spring vegetables are everywhere on the market shelves!  I couldn’t resist to preparing the first spring vegetables sautéed of the year. A classic in our house that can accompany fish, meat, tofu, eggs, or just be eaten like that. Choose the spring vegetables of your choice: new potatoes, asparagus, green peas, snap peas, new carrot today for me, but you can add new onion, green beans… a bit of olive oil in a pan and start to cook the potatoes, then the carrots, the green peas, finish the asparagus hardest part and later the heads and the snap peas. Add kosher salt and pepper and serve!

Recovery food

As I was telling you on Monday, I was pretty down with pollen allergy and vertigos. I am very rarely feeling bad so I am not used to it and it annoys me a lot to be reduced in any of my activities.  Because of the vertigos I could only eat industrial butter rolls, the one sold in all the combinis, and drink coca-cola. What a diet for me!!! So as soon as thing got better I prepared a very simple recovery recipe with fresh vegetables and little star pasta. I prepared two versions of it, a dry one and a soup one. In the dry version I use 1 new carrot and a bundle of mizuna, a bit of olive oil, that’s it. I cooked it until all the water was gone. In the soup version I added 2 little sweet potatoes, a few snap peas and curcuma. Very easy to prepare, very easy to eat! A perfect dish to recover!

Spinach-chicken ravioli

It is spring today and I am down with very strong pollen allergy, my head is spinning, my eyes are itching and I almost couldn’t move this morning. But I am talking at a public event and I hate to cancel my interventions, let people down. So A. has helped me take my things together, prepared breakfast, drove me to where I work today. Without him I’ll still be lying on the sofa. Now I’m getting ready. It’s going to be a tough afternoon but I’m gonna try! Well, while I wasn’t yet dying with pollen allergy I made some little ravioli. Same pasta asusual, with a filling of spinach and chicken. I wanted some cod or salmon but nothing that really attracted me at the supermarket so it ended being chicken. I cooked the chicken, the spinach and a tablespoon of cream cheese. Then filled the ravioli and served with olive oil. Super delicious!

Green chahan

Lunch is all like the weather today! Sunny, warm and nice! With tones of fresh greens: mizuna, spinach, snap peas; sesame and tofu and freshly cooked rice. It is so simple to make that even shooting a video of it was easy and quick! So today the recipe is in the movie! Enjoy your Sunday!!! 

Japanese style pasta

And here we are with a new recipe of Japanese pasta. Honestly I didn’t think I would like this combination so much but in the end I prepare some more than often after the one with pickled cabbage. So this time I prepared a vegan  base with new onion, canola, snap peas, fried tofu, to which you can add some bonito flakes. Served with spaghetti or liguine, and a few drops of soya sauce. Simple and delicious! Have a nice weekend!

No-name recipe

It’s neither a clafoutis nor a quiche nor a cake. It has the fluffiness of a cake, the moisture of a quiche and the edges of a clafoutis. This is simply what I have cooked last night for dinner. With my parents at home I try to come back earlier from work and t gives me the opportunity to cook food that I usually don’t cook because it takes too much baking time. I wanted to prepare a cake with plenty of vegetables but what I often don’t like in cakes is that they are too dry and so not too pleasant to eat. But clafoutis have no pretty shape. And a quiche for 4 won’t fit in my little oven in Tokyo. So I opted for a new option that fixes all the problems, and the result was awesomely delicious!!! The base is that of a cake with flour, baking powder and eggs, in which I have added a huge piece of silky tofu and olive oil. It gives this unique texture to the cake that make it moist and soft. I added some vegetables: 2 tomatoes diced, 1 new onion sliced, a handful of shiitake sliced, and for those who like, some grilled bacon. Except for the tomatoes, I grilled the vegetables in a little of olive oil to soften them. Add all to the mix, plus salt and pepper and bake for 30-40min or until all golden. I served it with a little green salad and sprouts.

Kumquat-shiitake-pork pasta

A new video testing with the preparation of a a singular recipe: pasta with a sauce made with shiitake, kumquats and thin slices of pork. A very nice and surprising combination that puts a bit of warmth and colors in a gloomy rainy day. Tell me how you like the video or what you would like to see. I’m testing several options.

A French basic

One things that is a bit my Proust’s madeleine as we say in French is a cery simple skillet if spinach with cream ir béchamel, poached eggs and bread croutons. A large part if the good memories about are the croutons. For some reason (probably because we have very little bread leftover) I very rarely make fried croutons, but these are so delicious with a cauliflower soup, a pumpkin soup or with spinach. Now I almost bever cook with cream or béchamel but spinach and croutons are always a good combination. I served them with pan grilled flounder and shiitake. 

Fried croutons: 

– a piece of bread, it doesn’t have to be fresh, but you still need to br sbke to cug it!  It can be white, whole or whatever, it’s slways good!

– 2tbs of vegetal oil

Cut the bread in 5mm to 1cm dices. In a frypan hest the oil. Add the bread and turn regurlarly at medium heat, until each side of the bread is golden. Simple and delicious!
