Socca lunch

Once in a while I like to prepare traditional socca as a base for a lunch one plates. It’s very quick to prepare and easy to serve with fresh vegetables. Since I’ve found huge eggplants at the farmers market I decided to make some basil (I have plenty in my herb garden) eggplant caviar and I made a big batch. I used very little olive oil in so that it can be eaten endlessly! I found it matches very well the socca and was a good dip. So I simply dresses the plates adding a few pan fried eggplant slices, some tomato and okra.

Eggplant caviar: 

For a big bowl. 

– 3 eggplants (not the small Japanese ones, the big ones! Otherwise you may make a small bowl!) 

– a bit of olive oil

– salt, pepper

– fresh basil leaves, or carvi seeds, or sesame seeds… 

Preheat the oven to 200. Set the eggplants on a cooking paper shit and put in the oven. Bake until it feels soft inside. Let them cool. Then peel them. Remove the extra water if any by just squeezing them.  Put all the peeled eggplants in the bowl of a blender, add salt and pepper, a bit of olive oil and blend to a smooth purée. Add the chopped basil, or the carvi seeds or the sesame seeds. Ready to eat, with bread, in a dish…

Fresh lunch

After our tennis game turned short because of a sudden snow fall, we went grocery shopping (beautiful radishes, carrots, spinach, cauliflowers and the first of spring veggies: na no hana (colza flowers) and fuki no to) and then back home for lunch. I was frozen and was about to prepare a warm curry or soup. But then the sun came out and the sky cleared again, so I changed my mind and went for a light radish, carrot and spinach salad, served with bonito sautéed in a crispy  chickpeas flour crust. I just sliced the radish and carrot with a mandolin, washed and drained the spinach and removed the hardest parts. For the bonito I used a puece of a filet for sashimi and sliced it. I dipped the slices in chickpea flour, and then cooked them on both sides in vegetal oil. Dressed the plates and serve with a bowl of rice. Have a nice weekend!

Back to normal… Socca lunch

Hectic weeks, busy week ends, when we arrived in Ohara last night it felt like we haven’t come for months. Everything in the garden has grown tremendously high and green, no cat was waiting for us… Of course H. came today but we are more a food supply than anything else so far… There is such work to do in the garden that we started early this morning and work until lunch, without even going to shop for frrsh veggies. So when lunch time came and we needed energy before our afternoon tennis game I had to fix something with what I had in stock: sokka and a few vegetables: tomatoes, cucumbers and avocado. Sokka is a traditional dish from Nice in the south of France. It is extremely simple to make!

Socca (chick pea flour galette) 

– 100g of chickpeas flour,

– a cup of water,

– a bit of olive oil,

– salt and pepper.

Mix all the ingredients. Preheat and grease with a bit of olive oil a frying pan. Pour some dough in the pan to obtain a 3-5mm thick layer. Cook, flip, cook again, serve immediately. It is also possible to do it in the oven but the pan is much more convenient for me.
