Muesli pancakes

Since A. is away, I was thinking of having muesli and fruits for breakfast, so I stopped by the supermarket last night to buy some nuts muesli and some soya milk. But then this morning I was up at 6:15 and decided that after a bit of workout I would rather eat pancakes. So basically I prepared my muesli in a large bowl, covered it with soya milk, added a mix powder of black sesame, almond and kinako (grilled soya beans), add 2tbs of flour, a bit of baking powder and stirred well. Then cooked on both sides in a frypan. Finished with my uncle’s honey, added a kiwi sliced and I got a delicious breakfast, or rather two! Because I prepared a bit too much… I so much used to cook for two people… it’s hard to be alone!

Baking bread

I haven’t posted any bread recipe recently but that doesn’t mean I haven’t baked any! I have baked a lit of fougasses this summer for our visiting friends. Of course for breakfast I have cooked more pancakes than ever, but bread is still one of my favorite. All warm, just out of the oven, the smells that mixes with A. freshly ground coffee is that of perfect Sunday mornings. After almost 3 years of making bread regularly now I rarely use my recipe book anymore, unless I am doing something fancy, and I just mix my various flours and seeds… in different combinations that all end up being perfectly delicious. Recently I bought a lot of organic whole wheat flour and some local spelt, buckwheat… flours so I’m enjoying making some mixes, to obtain a rich dark bread that suits very well jam, honey, butter, cheese and ham. Adding seeds: flax, sunflower, pumpkin, sesame; nuts or bran: oat or wheat add a lot of texture to the bread and is also very nice. This time I made a very simple 80% whole wheat-20% spelt and it was really delicious. For the rest of the recipe details please check that post, or look for “bread” in the search tool. Clafoutis

Yes! The season for clafoutis is coming again! I love summer and summer fruits simple recipes like clafoutis, tarts and simply poached fruits with herbs or spices. The clafoutis recipe is really simple: 4 ingredients only: flour-eggs-milk-sugar, but you can easily make some variations by changing the balance between the ingredients, or using vegetal milk rather than cow milk. Recently I’ve been using quite a lot of a new organic non-modified soya milk and again I used it this time. I wanted also a rather thick consistency so I used more flour than usual and fewer eggs (only 3). And since cherries are really sweet, and I had plenty, and I prepared the clafoutis for breakfast I used very little untreated natural sugar. Nothing new here, just that the season has arrived again and many clafoutis will be made this summer too I guess!!!

Breakfast!!!

Cooking in the morning for breakfast is great when I have the time: pancakes, scones, crepes… but it is not always possible and sometimes I prefer to bake something the day before so that it only takes the time to prepare some fresh fruits in the morning. My basic recipe is usually that of a cake. This time I used a German mix of dates and flax seeds that our friends made me discovered when we were in Germany last September. I added some more flax seeds and it was really rich and not too sweet, so perfect for breakfast.

Little breads

Recently I haven’t posted much about bread making. I made a trial for a panettone which was a delicious “something”, but not a panettone the recipe I used from “journal des femmes” website was just a big scam, after more searching in some cookbooks, I think I have a nice recipe to try. I also baked less because the past weeks have been quite cold and I know I have troubles making the dough prove and raise properly in this cold everything ends much more compact than it should.  But taking this as an opportunity I wanted to make an energetic breakfast so I decided to bake to make oat wheat breads and flaxseed little breads with whole wheat and spelt flours. The result was really nice. Because of the cold the breads were very dense and compact with a beautiful golden color. The taste and texture were exactly what I wanted, so even when your house is coldd you can bake! Don’t expect to make fluffy brioche or bread loaf, but for compact and nourishing breads it is perfect!!!

Hazelnut and spices cake

It is not often that I make vegan cakes but sometimes there is no choice. I really wanted to make a cake, start mixing flour, baking powder, sugar, and when it cake to the eggs, I realized I didn’t had any. And I didn’t feel like buying cheap eggs from the kombini (not because they are cheap, but because they come from I don’t know where, and how). But since the cake was on its way I just added a reasonable amount of hazelnut powder, and a bit of vegetal oil and soya milk to moisten the dough until I obtained a normal consistency for the dough. Then I added some anise seeds, cinnamon, cardamom in a large amount. And baked at 150 degrees for 30min. The result was a delicious fluffy cake, perfectly balanced in taste between the hazelnut and the spices. Something to try again for sure!!!!

Yuzu scones

As you know, I bake scones quite often. I love them for breakfast and for tea-time, I love the sweet or salty, and they are so easy to prepare and so quickly baked that I can improvise easily. Now it’s a good season for yuzu, they are easy to find locally, so It’s the good season for using them in many places: yuzu tea, yuzu spinach, yuzu in miso soup and of course yuzu scones! In the classix scones recipe their is a bit of lemon juice, which I usually skip because I find it hard to get my hands on organic local lemons. But because finding yuzu is so much easier for the yuzu scones I used both the zest and the juice. In my basic recipe I added the zest of half a yuzu (I actually like it roughly gratted rather than thinly) and the juice of a full fruit. Then I used yuzu perl for the finish (I don’t use egg batter for a golden finish, I prefer to use no egg). That’s it! Enjoy with butter, honey or nothing!

Bread making

The temperature is getting low at night these days; and mornings, though sunny are quite chilly. I love then more than ever to have hot bread, freshly baked, for breakfast. But because temperature in the house is much lower controlling the bread making is also much difficult. Yet, with more experience each year, I start to really manage to make bread with a more consistent result. A. loves white breads for breakfast so I prepared a big gâche bread this time.  just 250gof white flour, 175g of water, 7g of salt and 5g of dry yeast. Kneaded until soft and smooth, then proven for a few hours (the house is barely 15deg inside) and shaped as a flat ball. I bake it the following morning for 30min (or until golden) at 230deg. 

Breakfast

Usually my morning routine in Tokyo is very simple: after waking up I do a little pilates workout, then take care of the laundry, in the mean time A. prepares breakfast for us and takes care of the dishes.  So when A. is away my morning routine is quite busy since I have to squeeze in everything… 

Hopefully this weekend end I made a huge German black bread and we packed on fresh produce at the farmers market: persimmons, early tangerine (which green color is normal, not that they are not ripe!!!) and cheese from Komagata factory. And I am very lucky because my uncle in France has a few hives and makes delicious honey. Perfect for an Autumn morning!
