I haven’t posted any bread recipe recently but that doesn’t mean I haven’t baked any! I have baked a lit of fougasses this summer for our visiting friends. Of course for breakfast I have cooked more pancakes than ever, but bread is still one of my favorite. All warm, just out of the oven, the smells that mixes with A. freshly ground coffee is that of perfect Sunday mornings. After almost 3 years of making bread regularly now I rarely use my recipe book anymore, unless I am doing something fancy, and I just mix my various flours and seeds… in different combinations that all end up being perfectly delicious. Recently I bought a lot of organic whole wheat flour and some local spelt, buckwheat… flours so I’m enjoying making some mixes, to obtain a rich dark bread that suits very well jam, honey, butter, cheese and ham. Adding seeds: flax, sunflower, pumpkin, sesame; nuts or bran: oat or wheat add a lot of texture to the bread and is also very nice. Fougasse bacon-mustard
I make fougasse regularly, and I regularly change the ingredients and try new recipes: fougasse, sesame fougasse, olive fougasse… This time I tested a new recipe with smoked bacon and mustard. Simply delicious for a quick bite! I used my reguler recipe base with plain white flour. And when shaping the fougasse I added bacon that I cut in small cubes and mustard. Then folded the dough and rolled it to trap the bacon and the mustard mainly inside. And shaped it as usual. Same baking time, same olive oil brushing after baking.

Little breads
Recently I haven’t posted much about bread making. I made a trial for a panettone which was a delicious “something”, but not a panettone the recipe I used from “journal des femmes” website was just a big scam, after more searching in some cookbooks, I think I have a nice recipe to try. I also baked less because the past weeks have been quite cold and I know I have troubles making the dough prove and raise properly in this cold everything ends much more compact than it should. But taking this as an opportunity I wanted to make an energetic breakfast so I decided to bake to make oat wheat breads and flaxseed little breads with whole wheat and spelt flours. The result was really nice. Because of the cold the breads were very dense and compact with a beautiful golden color. The taste and texture were exactly what I wanted, so even when your house is coldd you can bake! Don’t expect to make fluffy brioche or bread loaf, but for compact and nourishing breads it is perfect!!!
Bread making
The temperature is getting low at night these days; and mornings, though sunny are quite chilly. I love then more than ever to have hot bread, freshly baked, for breakfast. But because temperature in the house is much lower controlling the bread making is also much difficult. Yet, with more experience each year, I start to really manage to make bread with a more consistent result. A. loves white breads for breakfast so I prepared a big gâche bread this time. just 250gof white flour, 175g of water, 7g of salt and 5g of dry yeast. Kneaded until soft and smooth, then proven for a few hours (the house is barely 15deg inside) and shaped as a flat ball. I bake it the following morning for 30min (or until golden) at 230deg.
Breakfast
Usually my morning routine in Tokyo is very simple: after waking up I do a little pilates workout, then take care of the laundry, in the mean time A. prepares breakfast for us and takes care of the dishes. So when A. is away my morning routine is quite busy since I have to squeeze in everything…
Hopefully this weekend end I made a huge German black bread and we packed on fresh produce at the farmers market: persimmons, early tangerine (which green color is normal, not that they are not ripe!!!) and cheese from Komagata factory. And I am very lucky because my uncle in France has a few hives and makes delicious honey. Perfect for an Autumn morning!
Baking bread!
I didn’t really bake for a few weeks and I really missed it. Kneading is a such a relaxing and nice moment that is like a ritual. The promise of delicious breakfast on top of that. I didn’t bake but I had a chance to get some nice wheat bran and oat bran so I was really looking forward trying them, in particular the wheat bran. I decided to make a whole wheat flour base to which I added the bran, and that worked perfectly well. I like the texture the bran brings to the bread and for breakfast it is perfect. Together with the passion fruit jam we found at the farmers market, I could eat breakfast 3 times a day!!!!

Semolina bread
When we were in Sicily I bought different types of flour and in particular a delicious semolina. I used it often for making pasta but I suddenly remembered a bread recipe using it and decided to try it for our breakfast this morning. The process is basically the same as making bread with plain flour except that 1/3 of the flour is replaced by semolina. I gives a very white bread with a soft and tender heart and a very thin and crusty shell. I shaped it as a regular bread but I assume it can be shaped differently too. Extremely delicious for breakfast with jam.
All Isumi everything
With friends from France and their kids visiting us in Ohara for a few days we’ve been busy showing them around, going to the beach, swimming and I’ve been busy in the kitchen preparing for our meals and trying to show them the best of the area: veggies, fruits, fish and pork. So for breakfast I prepared a huge (the biggest bread I’ve ever cooked) half whole wheat half white flour bread and I bought Isumi ham and cheeses, some local jam, honey and harvested a few fruits from the garden. Simple and delicious.

We have friends from Germany visiting us and they’ve bring some nice cheese, so I’ve baked quite a lot and bigger breads than usual. This one is a big loaf of half campagne with poppy and flax seeds, perfect for breakfast with cheese.
