Lunch on the desk

When busy weeks with visitors and eating out are followed by busy weeks preparing lectures, writing big grant proposal and traveling I need lunch that are quick, light and fresh, but full of energy and tasty. I am lucky enough to have a space in my office where I can prepare rudimentary things, and usually I would go for avocado-cream cheese-seeds on bread or bagel. But somehow I got tired of avocado and of seeing them everywhere on IG and in magazines. So this time I’ve opted for something new and more seasonal: an open sandwich with raw zucchini (the season is just starting), rucola, basil, fresh mozarella, a bit of olive oil, salt and pepper. That was a super boosting lunch! What is it you like to eat when you are busy?

When A. is out

There are weeks like this week when we have westerners visiting for work as I was mentioning yesterday. This week actually both I and A. do have visitors and this means a lot of eating out, and usually working late (the regular work still has to be done, right?), so when the opportunity after a long day at work to dine at home (alone) finally arrives, it’s only to eat things I love, simple, fresh, and full of cheese that A. wouldn’t eat :)!
I was lucky to find beautiful tiny zucchini in Koganei and I had a few cherry tomatoes waiting in the fridge, I quickly roasted both of them in a hot pan, just a few minutes, I added pieces of mozzarella, the fresh juice of half a lemon, a bit of olive oil, salt, pepper and went out on the terrace to cut some fresh mint, and my dinner was ready, together with a taste of summer!

Comfort food: cacao madeleines

I consider most of what I cook as comfort food because I only cook what we love and we indulge in some delicious breakfast everyday. But today I needed something special for tea, something sweet and warm, because the weather was chilly, because we had a short night and a long day, because I was sad we split our 4 kittens into 2 groups to deliver to their new homes and one group has left already. So I decided to prepare madeleines. I used the recipe I presented before, but slightly changed it: I added plenty of cacao powder, refrigerated 90min and cooked all the time at 200. I managed to obtain pretty bumps ans the taste of cacao was well present which is not often the case with cacao taste sweets.
Now it’s time we go deliver our last two kittens. En route to Hayama! It’s gonna be a long trip for them!

Magic friends

What I thought was a crazy thing Saturday turned out to be an incredible experience. In less than 48h we have found more loving houses for our orphan kittens than we can actually satisfy! Thanks to some magic friends our kittens are living a happy life in our bathroom in the country, while we work in Tokyo and hopefully by the end of the week they will all have new families. (Appologies for those who wanted one and won’t) And if it works well they will stay in pair so won’t be too home sick!!!! I keep my finger crossed and thank again everyone who is helping in this adventure!

Crazy thing

In the last few days I haven’t cook much, just to enough sustain us. Indeed, I’ve had little appetite and couldn’t sleep because we’ve found our cat Pablo dead in a rice paddy irrigation canal, and I did this crazy thing to take her four orphan kittens just 4weeks old and take care of them. I didn’t know what else to do. Yet the golden week is getting to its end and we are going back to Tokyo without the kittens. We’ve arranged so that someone will come every day to take of them and we needed to arrange for them to live in our bathroom confortably and safely: I found 2 kittens stucked in the bathtub at 3am!! In the mean time we are looking for loving houses for them. If you know someone in Kanto area, please let me know!!!!

All Isumi everything

With friends from France and their kids visiting us in Ohara for a few days we’ve been busy showing them around, going to the beach, swimming and I’ve been busy in the kitchen preparing for our meals and trying to show them the best of the area: veggies, fruits, fish and pork. So for breakfast I prepared a huge (the biggest bread I’ve ever cooked) half whole wheat half white flour bread and I bought Isumi ham and cheeses, some local jam, honey and harvested a few fruits from the garden. Simple and delicious.

The city of Isumi has a special pork meat called Isumi pork (いすみ豚), what is special about it I can’t really say now but it is for sure delicious, very tender and juicy. But since they grow pork in the area, we were thinking it’s really a pity they don’t make ham (it’s really hard to find good ham in Japan in particular in supermarket in Ohara), until our friend S. visited us yesterday and arrived with some fresh ham, from Isumi!!! Super nice ham!!! So we decided to go and check out the place where to get some, a small meat shop near the railway and Ohara station. They have smoked ham and pepper ham. We tried both and both are amazing! Apparently the pork farm is apparently in Otaki. We will probably go and check what they have soon. In the mean time, we are really happy to have found some really nice ham and had some for breakfast with eggs and buckwheat crepes!!

Cocotte

I always buy pork from Isumi when possible, for it is really tender and soft. My preference: pork belly (豚バラ – butabara) for the taste (but I only eat it when it’s ultra cooked and the fat has melted, and it’s all crispy) and pork filet (ヒレ – hire) because there is no fat and it’s really tasty. With the cold weather lasting a bit too long, I’ve opted for a nice cocotte of veggies with pork filet and pork belly for two meals in one preparation. In my Staub cocotte I first put a little of olive oil, then line the slice of pork belly, then I’ve cut 8 little carrots in halves and added them, 6 big shiitake sliced thickly, a piece of lotus root sliced thinly, one yellow paprika sliced. Plenty of thyme and fresh rosemary, salt pepper and the pirk filet. I cooked under cover for 45min and stirred every 15min. I served only the veggies and the pork belly for lunch, and kept the filet for an other meal. I kept the whole cocotte as such because I wanted to keep the juice for some pasta also (I just boiled some anneli siciliani that I rolled in the juice and keep to serve with the filet).

Apple, vanilla and cinnamon cookies

I love to eat freshly baked and still warm bread, pancakes, brioche or whatever for breakfast, but it is unfortunately not possible every morning. So sometimes I bake in the evening so that we have something ready in the morning. And for that tarts, cakes and cookies are the best. I love the classic mix apple-vanilla-cinnamon, so i made some kind of thick cookies with fresh apples on top for our breakfast. The trick is to have them not too sweet for breakfast, so I mixed the flour with oat bran and just a little of sugar and a little of butter, I added one egg and a little of baking powder, plenty of cinnamon powder and vanilla beans. I then roll the dough to 3mm thick and cut the shapes of the cookies. I peeled the apples and cut the shape too a little smaller and topped the cookies with it. Baked them at 170deg for 20min. And added a little of vanilla on top. Simple and perfect anytime of the day actually!
