Plum plum plum…

June is the time for the rainy season, and every day the weather reminds us that, but it is also the season for plum harvesting and plum pickling.

Even though I trimmed many of our plum trees this winter, the amount of fruits they produce it still enormous and it’s also time for giveaways. 1Kg here, 3Kg there… yet the harvesting is tedious and with one rainy day following the previous one, it doesn’t make things easy.

Once harvested I pickled quite a bit of our plums. I usually make plum wine and plum syrup with the green plums and umeboshi with the yellow ones (which is about 7 to 15 days after harvesting the green plums).

But because only our visitors drink umeshu and I still have plenty from last year, and we drink little syrup and again last year I made plenty, I decided to try new recipes. One new syrup recipe and one of savory plums in soya sauce. Because the preparation has to sit for three months I have no idea what it would taste like but just wanted to share that recipe because it looks really nice.

Soya sauce pickled plums

– 1kg of green Japanese plums

– 1/2L of soya sauce

– 4tbs of brown sugar

– 2 pieces of dry konbu (4x4cm)

– a handful of katsuobushi flakes.

Wash the plums and remove the stems. Dry them well. Pick them to make a few small holes in. In a clean and sterile bin, set the plums, add the sugar, the konbu pieces cut in four, the katsuobushi flakes. Cover with the soya sauce. Set to rest for 3 months. Turn the bin every week. We’ll see in the results together in 3 months!!

Golden week!!

Well, well, well… this time of the year has come again and for me golden week means first ocean bathing, the beginning of the bodyboarding season and the beach season. This year the weather has decided differently and it is so cold that I spend my evenings curled in my cashmere or under a plaid, with heater still on. Not only is it cold, it is also raining quite a bit some days Limiting all outdoor activities. So I decided to think of the summer and get ready for it, and took on the challenge my neighbor gave me: sew my own yukata!

My first challenge was to find the proper fabric in colors and patterns that I would actually wear. I opted for online shopping at Hotta-shop and found a cheap roll of yukata fabric 100% cotton and made in Japan, and delivered in a decent amount of time. I’m actually very pleased with fabric and think of ordering some for my next projects. Then during 3h with my 88yo neighbor I learned how to measure and cut the fabric for making the yukata, and starting sewing. I’m still halfway through, as we had friends from France over for a couple of days, I will likely finish today or tomorrow…

Sewing is a great challenge for me as it is a very twisted way of thinking that I need to acquire, and my teacher prefers spending time in small chitchat than the long explanations I would actually need. Anyway I’m having fun and can’t wait for the summer to come!!!

Oh… but don’t worry I haven’t forgotten to cook! For our friends, after our little hike I baked my new scones in a white chocolate, and milk chocolate and miso peanuts, they simply loved them!!! I cooked plenty of other things, some coming soon!

Memories

No cooking or recipe talk today… just talking about me and us. About what February 24th means…

12 years ago today A. and I got married… it took us years to find where and how we would do it, but suddenly, one day, in Tokyo, we found the place and everything was settled in less than two months. Planning for years is not really our style… The whole idea was to have fun and share that with friends and family here in Tokyo. This day ended in a flash, everything was so quick that every year I wish I could do it again… wear that beautiful off white kimono, walk to the shrine, share sake with A., enjoy the plum blossoms, and then take every one to a very unique kaiseki restaurant, and finish with champagne and plenty of friends, a shamisen performance from A.’s group and a memorable lion dance by our friend K.. I also perfectly remember not having time to eat and scavenging our room and ending up eating a whole box of macarons M. offered us!!! I am so grateful so many people came from all over the world to share that moment, and many more, with us… and thanks to those that were with us by thought.

Making miso again

The time of making miso has come again… and just like last year I went to our neighbors’s S. and W., and made miso with them.

Below⬇︎it’s me equipped for this task with my gears: in the orange furoshiki, a large container with a loose lid that has been sterilized, a bowl and a pestle. On the other hand, freshly cut sasa bamboo to avoid the miso to rot on the top. Leaves only will be used after being sterilized. I was actually really surprised how it worked well last year! Only parts that were not covered got a bit of mold, the rest was perfectly clean!

Now I am ready for a couple of hours In the warmth of the stove, chatting with S. and W., crushing boiled soya beans, mixing with koji and salt, making balls and crushing them in the container… but you know all that since I did it last year!

Now I am again waiting for 1year to try this new miso… but I also learned that 3years miso is very very delicious… can I wait 3years???

When I fail… 🚮

Once in a while I make a cooking failure… recently it hasn’t happened much because I master better my kitchen and the products I cook, and I have gained in skills a lot. But when it happens it is always very sad… and last night was one of this saddening moment when you have to face that what you have made with patience and love should end in the trash and nowhere else…

As often of Sunday evening I wanted to bake a quiche. Something I master but it was without counting on one ingredient… I had spinach and kabocha and wanted to use both. I thought that with this cold outside, a warming chestnut flour pie crust would be perfect. So I reached for the bin in the fridge in which I store chestnut flour. I keep most of my flours in the fridge and more particularly this fragile flour that is sensitive to pest infestation and that I cannot find easily in Japan. I usually get my chestnut flour from my parents when they travel to Corsica, or to the country house in the Cevennes.

I was a bit startled by the smell when I opened the bin, but I was just thinking it’s been a while I haven’t smelled chestnut flour and it smells strong… while preparing the dough with olive oil and love things were doing good, the dough was smooth and easy to roll, perfect! I prepared the vegetables and put everything in the oven… and then only I really understood what I feared… the flour was rancid… I didn’t know it could happen but there was no doubt and a quick check on the internet confirmed my diagnosis. I waited until the whole quiche was baked to taste the pie crust. No doubt. The rancid flavor stay in the mouth long, almost disgusting. A. was also trying and same conclusion. Now what… would we die eating rancid baked chestnut flour? Probably not… would we get sick? Maybe… for sure taste wise it was bad. I first decided to save the vegetables and remove the pie crust but the task was tedious, and the result not conclusive. So I had to take this horrible decision to trash the whole thing. I was sad after. All these nice products, the effort to prepare it, and the expected pleasure of eating it once back to Tokyo… and instead we had a very quickly fixed dinner made of whole-wheat spaghetti with grilled swordfish and lemon zest and olive oil dressing. Hopefully there are still a few lemons in the garden and I harvested some before going and I had bought some nice local swordfish Saturday…

I simply grilled the fish in a frypan without any fat, then added the zest of 1/2 lemon topped with olive oil. Boiled the whole wheat spaghetti and served the whole together.

Eating local when expatriated

This question has been in my mind for a very long time anytime I use #localfood or #eatlocal: What does it mean to eat local when you are expatriated and you travel once or more a year to your home country? Does 100% of the ingredients have to be local? If not how much could be alien? To what extent? Behind that there is a question of identity and a question of personal choices.

Traveling home means coming back with a suitcase full of the great local products, right? But these products are not local in the country I live in… they are barely sold here and when a surrogate is, it is usually a poorer quality version… what could beat mum’s olives or fresh ricotta salada from Sicily???…

After a long time carrying pretty much everything, in particular organic whatever… To be honest, I use to bring a real lot of food related things a few years ago. In particular when I started to bake breads and I wanted organic flours, and couldn’t find anything I liked in Japan because I was new to the area and didn’t know where to look at (I also think that baking has become trendy and it is easier now to find the basic products). Now I know that I can find good flours of different types of wheat in Japan, produced locally and organic and that is a great relief not to carry 10-20kg of flour in my suitcases anymore.

I have now switched to bringing back only a few things and in smaller amounts. Mainly products that my mum is making, for example: olive oil with the olives from the garden, bins of black olives in herbs saumure, dry herbs from the garden: thyme, verbena, laurel, juniper… homemade jam with fruits that do not exist in Japan… and a few very local staples bought around to store in the pantry: sea salt from Camargue, chickpea flour, green lentils, dry fruits and when in Italy riso for risotto, farro, polenta, dried porcini, finally there’s always a bit of space for a few fresh products: local cheeses for me and cured meat for A..

So what does it mean “eating local” in this international context???

I realize that as much as I cook Japanese food, I am also attached to my food roots, food from the south of France, food from Italy (I feel Italian food as a part of my roots somehow…) and I was discussing earlier in that post, the cooking that ressemble me best is “half”. So for all the fresh products I use the local circuit, for everything that as a good substitute I use the local products: Japanese flours are great! Mozzarella from Hokkaido is really nice… but Parmigiano sucks when it’s not from Italy!!!

However I try to avoid buying imported products, but rather only use what I can carry with me or sometimes receive as presents… that has been made easier with the fact that it’s been more than 5 years I stopped buying processed, canned or frozen food, and even more (thanks 3/11) that I carefully check the labels to check where products come from. It’s a systematic habit and it doesn’t take more time as labeling in Japan is quite simple and easy to identify and it feels so much better choosing consciously what I eat.

What can be better after a long day at work and a chilly evening than a dish of roasted vegetables from Isumi, with olive oil from my hometown and thyme from my parents garden?

n.b.: I still haven’t shifted for chocolate and black tea…

Miso

Remember last March? I made miso with our friends… and I had to wait about a year before being able to try it… actually our friends came home the other day and we talked miso, and they said that their miso was ready and 9month were sufficient… so I couldn’t wait to open my bucket and check what was under the big stone and the bamboo leaves… I totally didn’t sneak peek in during the whole time, worried that could prevent it from fermenting correctly.

First there was a bit of beautiful blue mold on the edges of the bamboo leaves, but that is normal. Under the bamboo leaves there was a beautiful, clean and fresh miso waiting!!!

Just uncovered miso

Without any delay I moved the miso from the plastic jar (I like better the old pottery for pickles… but mine was too small…) into bins and started using it right away. First of all with daikon and carrot sticks. It’s always the best way to test the real raw taste of miso. Then of course in miso soup, and with spinach and finally a simple recipe with chickpeas, spinach, and an egg. The miso I made is really nice. It has a texture where you can easily see the crushed beans and I love this texture for classic miso. Of course you don’t find this in white and red miso, which are much creamier. I found it a bit salty when I first tasted it, but now I don’t feel that anymore. I will definitely make miso again this year!!!

Chickpeas, spinach and miso

– 150g of boiled chickpeas

– 1 bundle of spinach

– 2tbs of miso

– 2 eggs (optional)

Wash and chop the spinach. Blanche them in very little water. Drain them. In a slightly olive oil greased pan put the chickpeas, the spinach and stir well, when the chickpeas are warm, in a small bowl dilute the miso in 2tbs of water and add to the pan and stir well. Cook a sunny side egg if you want. Serve the chickpeas and top (or not) with the egg. Enjoy and stay warm!!!

Hand making

I’ve always loved making things with my hands… whether it’s been cooking, or small crafts, or drawing, but with a grand mother professional knitter, a mother and elder sister that know sewing, as the smallest one I didn’t really get a chance to learn any on these. Knitting I would probably be able to catch up, I did a little knitting when I was a child, but sewing… except for making squared pillow cases and the like, I really know nothing, and cutting is even worse, ask A. about my attempt of making a cylindrical pillow case… so when my old neighbor asked me if I wanted to learn how to make a traditional Japanese quilted jacket, I knew it would please her to spend some time with me chitchatting, I just couldn’t say no! I love learning new things to do with my hands. She told me what to buy and I prepared everything to be ready when the making day would come. She told me: “you’ll see it’s very easy” I understood “it will take one afternoon or one evening and you’ll have a new overcoat”… it was underestimating the skills needed and my total lack of them!!! It took me one evening just to cut and prepare the basic shape and she was guiding me all along, one other evening to add the filling and do the preparation sewing, and one evening to finally finish the hand sewing! But I did it!!! I am very proud of my first real piece of clothing! Hand sewing is yes time consuming but the cutting and mounting part were really interesting to learn!!! Learning how to make the best of the piece of fabric you have, how to avoid useless cutting and sewing, and how to optimize ease of mounting the whole thing together was really eye opening on knowhow and craftsmanship. I will definitely try again. The thing I found the best of all was that rather than watching an online tutorials I found that having someone experienced to show me was crucial in succeeding and in making the whole experience engaging and fun. Because not only did I learned how to make the jacket but also how to make small consistent knots, to use a supporter to make straight and regular stitches… and one million other things about Japan 70 years ago!!!

That said, you can understand that I had fewer time for cooking, so it was always simple. And with the chilly evenings, a warm soup was always welcome. I made a sweet potato and cauliflower soup. It’s so easy and requires so little work that it was perfect for me.

Sweet potato and cauliflower soup (2 large servings)

– 1 small cauliflower

– 2 small Japanese sweet potatoes (or 1/2 if it’s only big ones you can find)

– 200ml of milk

– salt and pepper

Boil the vegetables after washing/peeling and cutting them. When tender, move the vegetables in a blender, add the milk salt and pepper and mix. If too thick add a bit of the cooking water. Serve immediately and eat hot!

Taken for granted

This short trip to Beijing has been quite eye opening for me. I realized that there are three things that I take for granted: the quality of the air I breath, the quality of the water I drink and the quality of the food I eat. This third one is more of a life style I have inherited from my family and won’t talk about it today. The two others, I’ve never really thought about it before to be honest… there has been a few times when I was living in Paris I felt suffocated by the pollution in the air, and that the water tasted really bad. In Tokyo of course I have been worried after March 2011 with air, water and food. In early spring and in the summer I sometimes check the quality of the air for pm 2.5 but it has nothing to do with how I felt unsecured about that in China. Last year in Shanghai I was concerned by the air quality but it wasn’t as strong as it felt this time in Beijing. When seeing everywhere that you cannot drink tap water unless boiled, I realize I was living on bottled water in plastic containers, something that I avoid as much as possible to use in Tokyo… and feeling always worried about what I drink was quite strange actually for me and made me think that being able not to care about what is coming out the tap is just a precious gift. Add this to waking up in a smoggy city with air quality quite alarming made me ask myself unformulated questions about this giant gap between ultra-urban areas and rural areas. Not that rural areas are free of pollution… the river cleaning we did a few weeks ago showed me how much farmers destruct their surroundings by being careless and lazy. And I think carelessness and laziness are really two keywords for me that represent very well our societies. Being so careless that in the end you can’t breath the air around you seems unbelievable to me but that’s what it is in Chinese big cities and I do believe that it is not only China… society has decided it’s better to consume more of an electricity produced by coal rather than breathing normal air. Looking always first at serving a purpose that I cannot understand, up to a point where cities are becoming unlivable just revealed to me my misunderstanding of the world I live in, the gap between the ideals I believe in and a certain urban reality.

In the meantime, traveling is always full of surprises and even during such a short and busy visit I discovered at least two interesting things food-wise: beancurd noodles that I had in a restaurant and rose and honey milk tea that I had at a bakery where I stopped for breakfast making quite good pastries and funny artistic cakes (that I wouldn’t eat). I actually have a very bad knowledge of Chinese cuisine mainly for two reasons: the use of many ingredients I don’t eat (jellyfish, shark, seafood, meat…) and the spicy food from some regions. I would love for example to know more about Chinese zen cuisine but never actually heard about any. May be they just ate rice… but these beancurd noodles could have been something they ate… I’ll definitely try to find some information and get back to you soon if I find anything interesting!
