Rice – お米

In Japan finding deliciouss Japanese rice to cook is not difficult, it’s like finding bread in France or pasta in Italy. Yet finding organic rice or at least non chemical rice is not so easy. There are only few places I know in Tokyo where to find some for sure and the one usually sold in supermarkets is not chemical free. In the countryside the “Eco” label is already a guaranty of better quality in terms of production, but I’ve hardly found it in the city. Isumi is one place that grows rice in Chiba and they have a rather big production, and I was surprised the other day to find something new on the shelf at the local cooperative: a 100% chemical free rice grown locally and sold in a nicely design package. So I had to buy it. I support all initiatives for local, chemical-free, environmental-conscious production and if possible aesthetical and sustainable packaging. I think this one has it all. I believe the packaging (who buys 2kg rice vag in the country???) is really targeted at Tokyo hipsters (even if there is nothing really as such) but I think there is something good in developing it, it just has to stay sizeable and not to become a crazy business which losses all the ethics and original purpose.

Simply baked veggies

When the winter market decide for you what will be on the menu, it’s veggies, veggies, just veggies simply oven cooked with thyme and a very little of olive oil. From top left: purple sweet potatoe, potato, romanesco, red carrot, shiitake. Copy paste and get a dinner for two after baking for 1h at 170deg in the oven. Serve as it is or add a splash of olive oil and a bit of salt.

Natsumikan fluffy and frosted cakes

We have two natsumikan trees in the garden, or also called amanatsu. Every year the trees are covered with fruits and usually I would make jam with them and also use the zest since I know they are perfectly safe of chemicals and other nasty products. Usually the fruits are rather sour but this year they are incredibly sweet, as I discovered while making some fluffy cakes with the peel and the juice. For the fluffy cakes I used the recipe of the madeleine but put a little more baking powder and baked them at 180deg until golden. And because the juice of the fruit is really good I did a little frosting using only ice sugar and juice. Perfect for tea or breakfast!

Curry mochi

Because fresh rice cakes, or mochi 餅  come in a bundle of 6, I had some to eat so I decided to experiment a little with a vegan curry not served with rice, but with grilled mochi. Something in between a nan and rice! And it worked super well!!! So here’s what I did: in a large pan greased a little I cut 1/2 leek, 1 potato, 2 little purple sweet potatoes, 1 turnip, 1 carrot, 1 red carrot, after it started to get golden I added some water just to cover, and 2 table spoons of curry powder, 1 tea spoon of tumeric (curcuma), 1 tea spoon of carvi seeds, 1 tea spoon of coriander seeds, grinded black pepper, a little piece of cinnamon and cokked until most of the water is gone. In the oven I arranged the rice cakes on a sheet of aluminum foil and baked them until they grown (I love to watch them in the oven, moving, breathing…) and the tip is golden. Then served all together.

2 versions for the same veggies base

This weekend I tried quite a few new recipes, mainly for breakfast and teatime and we spent quite some time outside in the garden preparing for spring: there’s still loads of fallen leaves, and trees to trim… So when it comes to a meal, something warm and energetic was really important. I had a piece of cabbage that I really wanted to use, and some beautiful winter red carrots. The leftovers of whole rice, and fresh rice cakes (mochi) that I bought at the local farmers market (I love rice cakes but my husband don’t like them to much so I don’t buy fresh ones too often). So I decided to prepare a two way dinner, one a vegan chahan (sautéed rice) and the other a kind of o-zoni (the soup for new year with rice cake in). In a wok I cooked the chopped piece of cabbage and one carrot sliced with a bit of oil and then a bit of water. In the mean time I prepared some konbu dashi by boiling two pieces of konbu in 0.5L of water. I then moved roughthly half of the veggies in the soup and cooked a little longer, while in the wok I added the whole rice already cooked, a bit of sesame oil, and some sesame seeds. I grilled the rice cake to soften it, and added a large spoon of miso in the soup (ideally white miso, but I didn’t have any).

I served both, added the rice cake in the soup, and ready to eat! 

Cauliflower soup x katsuobushi

Too happy with the mix cauliflower and katsuobushi in the tart the other day that I decided to try it in an other version: a warm soup for a cold evening. And the magic worked again! 

 It’s crazily simple and delicious: boil a cauliflower (I just removed the green leaves, washed it and boiled it all in one piece in 3cm of water under cover. Once soft I roughly crush it with a wooden spoon and mix it with the remaining water in my blender, add black pepper and the soup is ready. When I serve I add some thinly cut katsuobushi (usukiri), that’s it!

3 types of cabbage tart

At the local farmers market the other day I found beautiful cauliflower, romanesco and broccoli. Having all them together I couldn’t help but cook something mixing it. I love the idea of having ingredients close in shape but different in taste and color, and the first idea that I had was to make a tart with a piece of each. And becauseI really love the idea of mixing Japanese flavors with western ones I decided to add in the base some katsuobushi flakes. For the dough, I opted for a classic sable dough. A perfect balance.

Miso-parsley-pork meat balls

Nothing better than a one-bowl meal for a perfect lunch. Donburi are really easy to prepare in endless seasonal variations, with meat, fish or vegan, with white rice, brown rice, a mox of grains… 

For this one I used plain white rice, seasonal veggies: turnips, carrots and shiitake, and prepare miso meat balls. For that I used pork meat, about 100g, 1 egg, 2 or 3 branches of parsley, 2 table spoons of panko, and 2 table spoons of miso (of your choice). I mix all together and cook the balls in a frypan until golden. The mix miso-parsley is really delicious!

Fluffy tofu omelet

I am extremely picky on the quality of the food we eat and I find it ridiculous to want to eat absolutely meat or fish at every meals or everyday. I’m more inclined to cook a really fresh and delicious piece when I find one and skip it the rest of the time. Lot’s of people curiously worry about proteines intake but not about vitamins or other as much important nutrients. I care about none because I know that what I cook is perfectly healthy. I’m a vegetarian that eat sometimes a bit of cooked white meat or fish. And I’m an egg lover!

Eggs are perfect from breakfast to dinner, they can be prepared and combined in so many ways that I could cook them differently pretty much everyday!! So when I found myself with a bloc of momendofu in my fridge, immediately I though about a delicious fluffy omelet for dinner. The tofu always needs to be drained for a better taste so never skip that part. In a bowl I put the tofu and 3 big eggs, a little of salt and pepy and I mixed until it took some volume up and started to foam. In a large frypan I heared s bit of vegetal oil and cooked on both sude the omelet. Then cut and serve with steam veggies.
