{"id":5592,"date":"2021-10-20T09:49:16","date_gmt":"2021-10-20T00:49:16","guid":{"rendered":"http:\/\/gentianeetantoine.com\/igk\/?p=5592"},"modified":"2021-10-20T12:45:56","modified_gmt":"2021-10-20T03:45:56","slug":"cruising-in-the-kitchen","status":"publish","type":"post","link":"http:\/\/gentianeetantoine.com\/igk\/index.php\/2021\/10\/20\/cruising-in-the-kitchen\/","title":{"rendered":"Cruising in the kitchen"},"content":{"rendered":"\n<p>Not that I have been more busy than usual, nor that I have less inspiration these days\u2026 but I\u2019ve been cruising in the kitchen\u2026 probably because of the season sudden change and this <em>in between <\/em>moment when you don\u2019t want to shit to the new seasonal staples too quick, but yet you have explored enough with the past season ones\u2026 eggplants, okras and cucumbers are slowly making way to pumpkins, carrots and lotus roots.<\/p>\n\n\n\n<p>And by cruising I mean Saturday ravioli, Sunday quiche, Monday chocolate cream, Wednesday steam buns etc\u2026 etc\u2026 hopefully Sunday was rainy, so after a nice bodyboarding session in a rough ocean I spent the afternoon browsing some of my very old cookbooks that were left in Paris 20years ago, and that I just received with our cargo\u2026<\/p>\n\n\n\n<p>The<em> Reboul<\/em>, a must for Provencal cooking, the first edition dating back to the 19th century, that I have been using to check basic recipes when my grandmother or mother were not available\u2026 I read it with a new eye and learned many many things!<\/p>\n\n\n\n<p><em>Les recettes faciles<\/em>, also plenty of basic ressources that help a lot for remembering how to make a good roux, or a creamy sauce\u2026 it\u2019s nice to go back to the basics again once in a while.<\/p>\n\n\n\n<p><em>Les recettes de la table franc-co<\/em>mtoise is probably the most alien to me. It was a gift from A. grand mother who was from Franche-Comte, a place in France I have never stepped foot, and where cooking is based on cream\u2026 but there are some great recipes and inspirations to gather from there too and the food A. grand mother would prepare for us!<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" width=\"1024\" height=\"1024\" src=\"http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2021\/10\/img_3204-1024x1024.jpg\" alt=\"\" class=\"wp-image-5589\" srcset=\"http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2021\/10\/img_3204-1024x1024.jpg 1024w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2021\/10\/img_3204-300x300.jpg 300w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2021\/10\/img_3204-150x150.jpg 150w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2021\/10\/img_3204-768x768.jpg 768w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2021\/10\/img_3204-1536x1536.jpg 1536w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2021\/10\/img_3204-2048x2048.jpg 2048w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2021\/10\/img_3204-500x500.jpg 500w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2021\/10\/img_3204-1400x1400.jpg 1400w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2021\/10\/img_3204-600x600.jpg 600w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>In the meantime, Japanese seasonal cooking has never been more attractive to me and I have been thinking about how to level up\u2026 while I don\u2019t feel like going to in-person cooking class yet, I still think about Shojin cuisine\u2026 <\/p>\n\n\n\n<p>I tested new ways of using Koyadofu, I mean <em>new<\/em> may not be the right word, but at least without any cookbook nor guidelines and made this soya sauce based stew of vegetables and koyadofu that was just a hit! The recipe yet needs a bit of polishing before I can share it with you.<\/p>\n\n\n\n<p>The other big hit this week was my classic <a rel=\"noreferrer noopener\" href=\"http:\/\/gentianeetantoine.com\/igk\/index.php\/2019\/11\/11\/persimmons\/\" target=\"_blank\">persimmon and cucumber tofuae<\/a>.
