It was too hot and the summer vegetables don&#8217;t go to well for making ravioli filling. But now that autumn is here, hey! Hey! It&#8217;s time to get the pasta machine out and roll some pasta!!!<\/p>\n<p>As the title indicates, I made butternut squash ravioli. It&#8217;s not my first time of course, and you can find different recipes already <a href=\"http:\/\/gentianeetantoine.com\/igk\/index.php\/2016\/02\/07\/201626butternut-squash-ravioli\/\" target=\"_blank\" rel=\"noopener\">here<\/a> and <a href=\"http:\/\/gentianeetantoine.com\/igk\/index.php\/2016\/12\/12\/20161212butternut-squash-ravioli-again\/\" target=\"_blank\" rel=\"noopener\">here<\/a>, but this time I decided to try making tiny ravioli and add some spices: nutmeg and cinnamon, and a bit more salt and pepper than usual. And serve them with roasted pine nuts and olive oil&#8230; and you know what? It was delicious!!! The cinnamon adds a really nice twist of sweetness and is much better than just the nutmeg alone. So here is the filling recipe and the sauce, for the pasta just as usual&#8230;<\/p>\n<p><img loading=\"lazy\" src=\"http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/09\/img_0845.jpg\" class=\"size-full wp-image-3863\" width=\"3024\" height=\"3024\" srcset=\"http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/09\/img_0845.jpg 3024w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/09\/img_0845-150x150.jpg 150w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/09\/img_0845-300x300.jpg 300w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/09\/img_0845-768x768.jpg 768w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/09\/img_0845-1024x1024.jpg 1024w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/09\/img_0845-1400x1400.jpg 1400w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/09\/img_0845-600x600.jpg 600w\" sizes=\"(max-width: 3024px) 100vw, 3024px\" \/><\/p>\n<p><strong>Butternut squash ravioli<\/strong><\/p>\n<p>For the filling:<\/p>\n<p>&#8211; 1\/2 butternut squash<\/p>\n<p>&#8211; 1 pinch of nutmeg<\/p>\n<p>&#8211; 1\/2 tsp of cinnamon<\/p>\n<p>&#8211; a pinch of salt<\/p>\n<p>&#8211; freshly ground pepper<\/p>\n<p>For the sauce:<\/p>\n<p>&#8211; a handful of pine nuts<\/p>\n<p>&#8211; olive oil<\/p>\n<p>Boil or steam the butternut peeled.<\/p>\n<p>Drain well and remove all the water, seeds and fibers. Let cool down. Add all the other ingredients and stir well. Fill the ravioli.<\/p>\n<p>In a frypan roast the pine nuts.<\/p>\n<p>Boil the ravioli, dress the plates with ravioli, pine nuts and a bit of olive oil.
