So the fave beans week ended up being nothing&#8230; sorry for that, but you can check my past <a href=\"http:\/\/gentianeetantoine.com\/igk\/?s=Horse+bean\" target=\"_blank\" rel=\"noopener\">recipes here<\/a> and <a href=\"http:\/\/gentianeetantoine.com\/igk\/?s=Fava+bean\" target=\"_blank\" rel=\"noopener\">here<\/a>.<\/p>\n<p><img src=\"http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/05\/img_9557.jpg\" class=\"size-full\"><\/p>\n<p>But while work keeps me busy, it doesn&#8217;t prevent for my mind to wander and invent new recipes. And this recipe is something that I have thought about for quite a bit now. I first thought about ravioli, but guessed it would be too common, and reminding myself (1) how much we love gyoza; (2) how delicious the <a href=\"http:\/\/gentianeetantoine.com\/igk\/index.php\/2018\/10\/13\/butternut-squash-week-day-5\/\" target=\"_blank\" rel=\"noopener\">butternut gyoza<\/a> I made were; (3) how easy it is to make, I could only try.<\/p>\n<p>Let me share with you this delicious recipe!<\/p>\n<p><strong>Fava beans gyoza<\/strong> (makes about 16 pieces)<\/p>\n<p>For the gyoza dough:<\/p>\n<p>&#8211; 50g of bread flour<\/p>\n<p>&#8211; 50g of pastry flour<\/p>\n<p>&#8211; a pinch of salt<\/p>\n<p>&#8211; 50cl of tepid water<\/p>\n<p>For the filling:<\/p>\n<p>&#8211; 20 pods of large fava beans<\/p>\n<p>&#8211; salt and pepper<\/p>\n<p>For the dressing:<\/p>\n<p>&#8211; 20 sansho leaves (kinome) or a small piece of fresh ginger<\/p>\n<p>&#8211; 2tsp of soya sauce<\/p>\n<p>&#8211; 3tsp of olive oil<\/p>\n<p>Prepare the dough by mixing the ingredients. Make a ball and leave to rest for 30min.<\/p>\n<p>In the meantime boil the fava beans and peel them. Crush them and add salt and pepper.<\/p>\n<p>Chop finely the kinome leaves (or the ginger if you use ginger). In a small bowl mix with the soya sauce and the olive oil.<\/p>\n<p>Now 30min should have passed. Make a stick with the dough and cut in 16 equal parts. Make 16 small balls, and roll them in a 1mm thick round of dough.<\/p>\n<p>I each round set a tsp of the crushed fava beans and close the gyoza with a bit of water on each side of the dough.<\/p>\n<p><img loading=\"lazy\" src=\"http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/05\/img_9724.jpg\" class=\"size-full wp-image-3694\" width=\"3024\" height=\"3024\" srcset=\"http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/05\/img_9724.jpg 3024w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/05\/img_9724-150x150.jpg 150w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/05\/img_9724-300x300.jpg 300w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/05\/img_9724-768x768.jpg 768w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/05\/img_9724-1024x1024.jpg 1024w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/05\/img_9724-1400x1400.jpg 1400w, http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2019\/05\/img_9724-600x600.jpg 600w\" sizes=\"(max-width: 3024px) 100vw, 3024px\" \/><\/p>\n<p>In a large greased frypan, add about 5mm of water and cook at high heat the gyoza. When the water is gone reduce a bit the heat and then flip the gyoza.<\/p>\n<p>Serve with the dressing in a side bowl to dip them in.
