It&#8217;s the sprout of a type of fern.<\/p>\n<p><strong><em>koji <\/em>\u9eb9 <\/strong>koji is the starter for fermentation of <strong><em>miso<\/em><\/strong> among others. It can be made of different sources, usually it is specified, as in &#8220;kome koji&#8221; \u7c73\u9eb9 which is made of rice.<\/p>\n<p><img src=\"http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2020\/10\/img_5905-scaled.jpg\" class=\"size-full\"><\/p>\n<p><strong>koyadofu<\/strong> \u9ad8\u91ce\u8c46\u8150 frozen-dried tofu a very Japanese staple, 500 years old from buddhist temple cuisine and warrior cuisine. Tofu let out in the cold to freeze a d then dried for several days in the cold, to obtain a kind of sponge packed with proteins and soya fat. Used in traditional cuisine, soups and many more.<\/p>\n<figure><img src=\"http:\/\/gentianeetantoine.com\/igk\/wp-content\/uploads\/2020\/08\/img_5273-2-scaled.jpg\" class=\"size-full\"><\/figure>\n<p><strong><em>kushinsai <\/em>\u7a7a\u82af\u83dc<\/strong> water spinach as many of the greens in Japan comes from Asia, but grows easily there.
